Chamomile Ginger Detox Tea.

Hello everybody.
Remember the detox water I did few weeks ago?  Well I’ve been doing it every day now and I really think and feel it’s very useful, gives more energy and freshness.
Yesterday my husband picked a big bunch of chamomile from the farm and I’ve been searching for a good healthy drink that has chamomile in it, search result was this refreshing detox tea, made from freshly grated ginger boiled a bit with hot water then you add some chamomile leaves and leave for few minutes. Pour into a glass with one teaspoon honey,slice of lemon and few fresh mint leaves.
I’m sure most of you know how calming and soothing chamomile is for the nervous and gastrointestinal systems plus it’s great effect on boosting metabolism and immunity. It’s a very good drink in cases of colds and flu and abdominal pains specially in babies

Detox Water and Couscous Salad.

Hello everybody.

Very busy Saturday as usual,too much was done today.

In an attempt to cut down food or at least try to start a diet  I made a big jug of detox water,recipe was shown on Roya TV you simply add two slices of lemons,oranges, one strawberry and a bunch of fresh mint leaves, I also added some ginger slices and rose water. Leave to diffuse for two hours then start drinking from it all day. It’s excellent for cleansing your body from all toxins.

Lunch was pizza and a bowl of couscous salad, this one is simply done by adding hot water to 1/2 cup of Italian couscous till it’s light,tender and fluffy then add it to your regular salad, really yummy.

Roasted Lemony Chicken and Potatoes.

Hello everybody.

As I mentioned yesterday we had a dinner gathering and I made a chicken and potato dish, which was incredibly juicy and well flavored cause of the awesome marinade I used.

 

Ingredients and method ( for 8  small pieces of chicken)

* zest and juice of one lemon and one orange.

* 1 tablespoon fresh or dry rosemary.

* 1 tablespoon oregano.

* 1 leaf fresh or dry sage (ميرميه)

* salt,pepper and olive oil.

*Marinate chicken in all these for a whole night or 3-4 hours minimum.

* in a deep oven pan,add some onion slices,bay leaves,cinnamon stick and few cardamons then add chicken with marinade close tightly with foil and leave in a medium heated oven for 1 1/2 -2 hours.

* when done roast chicken till golden then remove each piece to a deep serving dish.

* sieve remaining juices to get a clear fluid then add 1 tablespoon flour or starch diluted in cold water.

* leave to simmer till it thickens.

* You can bake some veggies or only potato cubes in another pan alongside also seasoned with rosemary,oregano,salt,pepper and a drizzle of olive oil.

* arrange potatoes around chicken pieces and drizzle sauce all over them before serving.

 

Really easy tasty dish,went well with the eggplant maqloubeh last night.

Hello everybody.

As I said today is a compensation to last week’s lousy food ! since I’m free this morning plus no car available, which is a blessing sometimes, I made stuffed chicken with veggies,freekeh soup, beetroot salad and this traditional kind of sweet called Zalabia which is as described best fried Crepe.

Bad Flu Day :(

Hello everybody.

No strength to cook anything today, have a bad cold and sleepless night.

Anyway I was going to lunch at Mom’s who invited my aunt and cousin,though I told her I’ll make the dessert but I really couldn’t.

Lunch was also fava beans with rice and a bid bowl of fresh lemony salad.

Moroccan Dish: Chicken with lemon and green olives.(دجاج بالزيتون)

Hello everybody.

As I said yesterday today’s lunch will be special to compensate for the lousy one, have this recipe ripped off from some magazine long time ago, really rich and juicy and of course it’ll be much tastier if you cook it in the tajin dish or pot Moroccans usually use.

Ingredients and method:

* chicken pieces with bones.

* 1 big chopped onion.

* 4-5 cloves garlic.

* 1 lemon peeled and slices.

* 1 tsp fresh ginger.

* pinch of saffron (زعفران)

* 1 cup green olives pitted.

* 1 tsp dried thyme.

* salt pepper and olive oil.

* Marinate chicken in salt,pepper,onions,garlic,thyme,saffron and ginger for 1 hour.

* heat the pan then add some olive oil, then add chicken pieces without marinate and saute till golden on all sides.

* add all marinade and leave to simmer for 10 minutes.

* add lemon slices and olives,some more slat and pepper if you like.

* add 1 cup water and leave on very low heat till done or you can put it in the oven if you wish.

* serve with rice or pitta bread .

How to Pickle Olives (كبيس الزيتون)

Hello everybody.

Headed North to hometown Irbid yesterday for two reasons, buying olives ,since it’s the season to pickle them,from the same guy we buy each year on the road before reaching Jerash and then to go visit my lovely cousin and have lunch with our dear family members.

To tell you the truth I’ve been making olives only recently , used to be my mother in-law’s annual ritual specialty but since two years ago  ,as she says, retired from the mission so I’ve been doing it her way and send her share.

Pickling olives is a very easy process but needs a day work and messes your kitchen a bit specially if you’re making large amounts. First you must pick the kind of olives you like,some people prefer big ones some son’t,I usually buy local kind (نبالي بلدي),then you must press it either manually or in a special machine usually found at the shop or seller.

You can find many ways and methods to pickle olives in books or by experience or in factories, personally I found this method the easiest and always works with me.

Wash olives well,try to remove leaves and stems as much as you can, then soak them in water overnight or two , the next day wash again then mix them with a good amount of sliced lemons,hot peppers and lemon juice. Make the pickling brine which is exactly one big spoon of coarse local salt to each cup of water ( each liter of water needs 4 big spoons of salt), put olives in big glass or plastic jars then fill with salted water to the rim,close tightly and leave till done.

*Note: olives might take a longer period of time to be ready this way (a month maybe) if you want to be ready earlier you must soak it in water and replace it each day for a week then pickle it.

*Note: a tip to make sure your brine is perfect,place a raw egg in it,if it floats to the top then it’s good if it sinks then you need to add more salt.

* Note: usually I remove some of the olives when done, make a new salt solution and add new lemon and peppers, that way it’ll always be fresh and green.

 

Well now back to yesterday’s lunch, it was AMAZING ,elegant table,delicious food,various dishes and most important of all good loving caring company, I’m so lucky to have such kind generous loving cousins in my family.

Dishes were: Mansaf,lasagna,rolled steaks,sauteed veggies,chicken pie and a salad, dessert was chocolate cake,yummy coconut balls (took the recipe and will make it soon) and I made my Almond Orange cake, even coffee and tea tasted great believe me.

Roasted Cauliflower.

Hello everybody.

Saw this recipe on my Facebook friend Mary’s timeline thought I’ll try it today,got a tiny cauliflower to do the test,well it turned out really good, light appetizer with a spicy sour taste,though as usual reality is never like the photo posted,Photoshop is so mean sometimes!

You simply marinate a whole cauliflower is yogurt,olive oi,lemon zest and juice ( forgot them in the photo) ,salt,pepper,chili powder and cumin. Then you place it in a deep pan and bake it in a well heated oven till brown and crisp from the outside,serve with green salad or as appetizer.

Well lunch was chicken tikka masala,got a ready mix this time,really good actually!

Cheesecake Pots.

Hello everybody.

I’m sure many many moms are delighted today right? Well it’s the first day of school for most students,though I feel sorry for them cause of the heat wave, they’ll all come back home sweaty and tired for sure. Nevertheless it’s back to order and routine, bye bye Summer vacation 🙁

Lunch today was simple Kofta,it’s too hot to do anything more complicated, I even regretted not making pasta with yogurt and mint instead,cooling dish.

I also started preparing for tomorrow’s diner party,made these cute cheesecake pots,very easy light recipe I have from an old magazine, they’ll be nice dessert after dinner.

 

Ingredients and method:

* digestive biscuits.

* 1 spoon butter.

* some strawberry jam.

* 1 can carnation ( condensed milk)

* 1 pick whipping cream.

* 1/2 cup plain yogurt.

* 1 pack cream cheese.

* juice and zest of one lemon.

* strawberry or cherry topping.

* crush the biscuits and rub in the butter till crumbly.

* divide the amount in glasses or pots.

* add small spoon of jam on top of biscuits.

* mix all other ingredients till creamy.

* add over biscuits then leave to cool in the fridge.

* decorate top with strawberry or cherry topping (will do that tomorrow)

Chicken with Herbs.

Hello everybody.

Today is chicken day ,I brought with me different kinds of mixed herbs from Cyprus so I did the recipe Chicken with sesame seeds and oregano and added some of new ones to it.

I also did sauteed vegetables,Armenian freekeh with cheese and I have some potatoes from yesterday. Made more lentil soup and fatoush.

Dessert today is qatayef again, nobody says no to it 🙂
