Kinder Bueno All Chocolate Cake.

Hello everybody.

My baby turned 18 today, though to me he’s still that blond skinny baby who never sat still for a moment, can’t imagine he’s a fine young man now.

Had a bunch of his friends for breakfast today, big variety of goodies : eggs in buns, manousheh, cheese, labaneh, hummus, falafel… etc.

Highlight of the event was a big fully packed with chocolate cake done upon his request, main filling was cream with crushed Kinder Bueno bars and topping was a mix of Oreo,Maltesers, Flakes and Wafers.

I also made mini pancakes with Nutella, bananas and strawberries in skewers.

Lunch is in process now, only some fries to go with left.

hummus and some leftovers.

Hedge Mustard (حويرنه).

Hello everybody.

Home  alone today, boys and hubby went to the farm early morning so no need to cook and since I’m going with my mom to visit her cousin this afternoon which will definitely serve lots of goodies,so a light lunch will do.

This herb crossed my mind this morning  and I was lucky to find some at the grocery store, though it’s much tastier if picked fresh from fields but we city people will have to live with bunches in stores , not so fresh but good enough.

It’s usually salted and washed many times then mixed with some yogurt or labaneh and some green onions, sharp peppery taste . For me this is the most perfect meal ever, love dairies in all shapes and kinds 🙂

I did some search for benefits of hedge mustard turned out it’s a very useful herbs as anti-inflammatory and anti-fungal actually long time ago it was called the “Singers Plant” cause of great effect in laryngitis and cough and soothing effect on throat , well good to know right?

Black Olives Pate(معجون الزيتون الاسود).

Hello everybody.

Went out shopping today, changed the hectic tiresome week for sure, it’s true that shopping is the best therapy, I’m positive husbands don’t agree with me 🙂

At lunch time kids were out and we weren’t in the mood to eat something heavy,so I took out some Irbid loaf (قراص عيد) given to me by my beloved aunt, heated it to eat with fresh labaneh, new makdous though it needs more time to ripen, some olive pate and tabouleh from yesterday, best lunch EVER,this is my favorite kind of meal anytime of the day !

Black olives pate is very delicious and easy to make,I removed seeds of old olives from last year, added some chili, basil and garlic powder then processed them all together. keep it in a glass jar covered with olive oil, very nice spread for sandwiches or as  dip with chips, better than buying it ready made right?

Note: you can keep it in freezer to be more fresh whenever you want it.

no exact recipe for this, all depends on personal experience and a good old fashioned stove.

Crunchy Courgettes.

Hello everybody.

I saw this recipe on Pinterest last week, got some courgettes the to try it. turned out really good, healthy light appetizer can be an alternative to fried or heavy dishes.you simply cut them, dip them in egg white then coat with breadcrumbs and bake till crunchy, you can add pepper, chili, oregano and salt of course to the crumbs as seasoning.

Well lunch was okra in the oven, couldn’t resist not buying those lovely small green okra yesterday, always be sure that fresh vegetables when in season make the best dishes 🙂

When I was done cooking my husband called to tell me his friends are coming at night,so I baked a simple orange cake with syrup on top and small buns ( pizza dough recipe) with some oregano and dry basil, then filled them with different kinds of cheese and labaneh.

Teramisu and Labaneh Mold.

Hello everybody.

Two events today,a small gathering for my lovely Auntie and her daughter coming from Irbid and a bigger gathering for my cousins this afternoon. Don’t ask me how I managed but I did don’t know how! time management is the key word, that’s for sure.

I made a Teramisu but a bit different from the real Italian one,no mascarpone cheese cause it’s not always easy to find it , but this recipe that I have from my dear friend Rula is very good, I even found out I don’t have sweetened condensed milk for it but I added cream and some sugar so taste was almost the same.

I also made labaneh with mint and oregano layered in toast bread and decorated with tomatoes, cucumbers and olives, you can decorate it anyway you like.

Ah I forgot to mention,I made spinach tabouleh and cheese rolls as well 🙂

Ingredients and method for teramisu:

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream, condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top. All set and ready now, waiting!!

PIZZA.

Hello everybody.

I’m pretty sure all kids won’t say no to pizza.specially if coming right from the oven and topped with each member’s taste

To solve this problem and save time at the same time.I bought large rectangular oven trays,I spread the dough and make 3 kinds of pizza toppings .all will be happy and eat it hot at the same time.

One can find many recipies for pizza dough, I usually stick to this one.
You will need:
*1 big spoon instant yeast.
*1 small spoon sugar.
*1 big spoon powdered milk.
*1 cup flour.
*1 cup warm water.
Mix all together till creamy.cover and leave for 10-15 min or till bubbles are formed.then add:
*1/2 cup vegetable oil.
*1/2 cup olive oil.
*5 cups flour.
*1 spoon salt.
*1-1/2 cup warm water.
Knead well for 10 min.leave in a warm place to rise.
This dough is called the 10 minutes dough، cause it does rise quickly and it’s very easy to handle.

As for pizza sauce. I usually mix canned tomatoes, tomato paste, clove of garlic, oregano, basil..then leave to simmer.cool and use.
Toppings are various according to your family’s choices. Today I have mushrooms.black olives.courgettes.I will make 2 small ones..one with za’tar , the other with labaneh, rocca leaves and tomato slices.
Bake the pizza in a well heated oven.add the cheese when it’s almost done not before.then drizzle a bit of olive oil on top before roasting.makes it extra crispy.

Though I know that many people prefer to order pizza, but I find homemade ones more, I don’t know how to describe it, maybe
loving.hahaha:)
