Red Velvet Crinkles.

Hello everybody.

Invited to a breakfast gathering this morning,so I thought a small gift box filled cookies would be great. Any homemade food made with love even if simple and small would mean a lot.

I prepared dough for both chocolate  and red velvet crinkles yesterday and baked them this morning.

Red velvet ones are first timers but I did the chocolate ones before, always a success.

Ingredients and method of red velvet crinkles :

* 1/2 cup butter.
* 1 1/2 cups suger.
* 1 pack cream cheese.
* 2 eggs.
* 3/4 cup cocoa.
* 2 1/4 cups flour.
* 1 tsp vanilla.
* 1 1/2 tsp baking powder.
* pinch of salt.
* 1 tsp red food coloring.
* 1 cup caster sugar.

* beat butter and sugar well till creamy then add cream cheese and whisk well.
* add eggs and vanilla.
* whisk in flour, cocoa and baking powder.
* cool dough in fridge for 4 hours.
* make small balls and cover with caster sugar then arrange all on cookie backing sheet.
* press each ball a bit so as cookies are crinkled.
* heat the oven well then decrease temperature till medium and bake for 10-13 minutes exactly.
* leave to cool well then store in a well closed jar so as not to dry.

Very easy and good looking though I prefer chocolate, taste is more rich.

Here is a reminder of the chocolate crinckles recipe

* 3/4 cup vegetable oil.

* 3/4 cup cocoa

* 1 cup sugar.

* 4 eggs.

* 2 tsp baking powder.

* 1 tsp vanilla.

* 2 cups flour.

* 1 cup confectionery sugar.

* Beat oil,cocoa and sugar well then add eggs one at a time.

* add vanilla ,baking powder and flour and mix well till you get a stiff dough.

* refrigerate for 2-3 hours.

* form into balls then roll each in the fine sugar .

* line in a greased pan or use wax paper or silicon sheets.

* flatten a bit with a fork then bake for 8-10 minutes in a medium heated oven.

* cool down then store in a cookie jar or closed tin so as not to harden.

Homemade Burgers♡♥

Hello everybody.

Friday is usually family day.Mom and my precious brothers came for coffee noon time,a Friday ritual♡♥

In most Jordanian houses it’ll be the only day of the week that all family members are home lunch time..I bet mansaf(منسف )
،maqloubeh( مقلوبه ) or msakhan( مسخن ) are  on many lunch tables today.

Well as for me.kids wanted homemade burgers with fries.usually I buy them readymade from the butcher.but today I did them from scratch.I found hundreds of recipies on the internet.they’re all similar.so I did most popular one.

Basic ingredients are:
*minced meat (I bought half beef with half lamb).
*1 small onion.
*1 clove garlic.
*1 cup bread crumbs.
*1 egg.
* 1 small green hot pepper (optional).
*salt.pepper.
Method:
*grate onion and crush garlic very fine.
*cut hot pepper very fine.
*combine all with meat, egg, salt and pepper.
*mould into balls then by using burger mould shape them into burgers.you can shape them by hands of course.
*leave in fridge for 15-20 minutes.
*heat the grill and cook them according to each one’s taste…medium or well done.

Today I made 2 sauces to add on burgers:
* caramelized onions with mushrooms: slice onions, add butter, 1 small spoon sugar and put on low heat till caramelized then add mushrooms, salt, pepper and bit of water.leave to simmer till sauce thickens.
* pickles with mayonnaise, mustard and ketchup all mixed together.
*of course you need sliced veggies and most important thing French fries.
Today boys made sunny side up eggs with the burgers…Sunshine Burger they call it!!!!

Homemade Kebab.

Hello everybody.

Sometimes you don’t have to go to a fancy restaurant or pay too much money for a fancy meal.
You can make homemade kebab and let it taste like it’s done on a bbq even.
I usually make many side dishes with it.today i’ll make yoghurt dip,roasted tomatoes, hot spicy potatoes.
I learned the yoghurt and tomato recipies from my husband. He usually makes them when going hunting with his friends.easy and quick.convenient for outdoor picnics also.
Yoghurt dip is made by mixing 3 big spoons of yoghurt with 2 big spoons of labaneh.add 1 small spoon of dried mint leaves and oregano.drizzle with olive oil.

As for roasted tomatoes, you roast 3-4 ripe red tomatoes, one hot pepper, 4-5 cloves of garlic sprinkled with salt and oil and folded in foil paper,,all in a hot oven till done.
You peel all, mash them with a fork add salt to taste…that’s it.

For the spicy potatoes.cut them to cubes and soak them in salted water.chop 4 cloves of garlic sautee in a bit if olive oil.
Deep fry the potatoes till crispy.leave on paper towel to remove excess oil then when still hot sprinkle with pepper, paprika, hot pepper and Tabasco if you like them extra spicy.mix well then add over garlic.
Before serving heat the potatoes till extra crispy and sprinkle some freshly chopped coriander (you can put them in the oven a bit also ).

Now to main dish.kebabs are simply kofta meat ( minced lamb meat mixed with onion, parsley, salt, pepper) usually bought ready from butcher. I add to it small spoon of mustard, ketchup, soy sauce and 2 spoons if flour and mix it very well.
Then you mould them over wooden sticks.
Tip: soak the sticks in water so as not to burn in the oven.
Place the sticks in a pan put leave them on the sides not bottom.
Put them in a well heated oven for 30-40 minutes. When all done and crispy heat one quick flaming charcoal till red and put it between the kebabs and close the oven so as they’ll absorb the flames..a trick that’ll give them a bbq taste.
