Fish Fillet with Tahini sauce.

Hello everybody.

Usual Saturday! took out some fish fillet from the freezer before going shopping, been waiting to do this recipe for a while thought today will be good cause weather is cool so fish will be convenient.

Ingredients and method:

* 1 kg fish fillet cut to large pieces.

* 1 large thinly sliced onion.

* sliced colored peppers.

*salt,pepper,cumin and lemon juice.

* tahini sauce.

 

* heat some olive oil in a large pan then season fish and coat with some flour and grill on both sides till golden.

* add onions then peppers,simmer till all are tender.

* before serving add tahini and simmer for another 15-20 minutes on low heat.

Quinoa Seeds.

Hello everybody. Today as a change of usual breakfast or lunch outings,which is  almost the most frequent entertainment for Ammany housewives, we were invited to an event done by “Gift Center” for the famous Eves Saint Laurent brand,a nice lecture introducing new products and a brief make up lesson,very nice and informative, we even went home with special gifts,thank you dear Nadia for the invitation,we really had a good time <3

Went back home to make lunch as quick as possible cause I took my time after the event finished testing makeup and perfumes so I was late ,I guess women forget themselves in such places don’t you agree?

Anyway I prepared ingredients to make chicken quesadilas before I left and made a new super easy quick recipe done with the loaf you buy from bakery (we call it Ramadan loaf ) then you add on it multiple kinds of cheeses ( kashkaval,halloum and white cheese) plus two spoons of labaneh,then toast it in the oven till golden. Thank you dear Maysoon for the savior dish.

Now for the quinoa part,these seeds are becoming famous cause of proven great benefits and healthy nutrients it contains,it’s now wildly used in salads and many other recipes.

Quinoa is considered a super food,it looks a lot like burghul we all know,but it must be cooked in a good amount of water then drained and used either in cold or warm dishes,it’s known to be rich in proteins,iron and fibers. I wanted to try it since my Facebook friend Mary sent me her beautiful cook book.

Here in Jordan you can find it in big stores only not in small supermarkets,last night I bought a small bag to try it ,well it tastes good,very much like burghul as I mentioned. I made a regular salad with grilled halloum,sun dried tomatoes and roasted almonds on top and added cooked quinoa seeds with it,really good, a chance for the kids to eat something nutritious.

Turned out a nice late lunch,all gone except for the loaf,kept it for dinner with a cup of tea 🙂

Lentils ( mujadara)

Hello everybody.

Lots of events going on today,I went out to breakfast with my lovely friends to celebrate dear Wafa’s birthday, early this morning I baked another Nescafe Cake, I think this one will be my trademark from now on,with the same ornament and flowers. Everybody enjoyed it and was a delightful surprise.

Back home I got the nicest present from my lovely niece Layan,a box of mixed herbs from Istanbul, thank you dear 🙂

At lunch time plans changed a bit,I’ve  already cooked some lentils before I left ,thought I’ll make one of Mary’s recipes from her lovely book “On Healthy Cooking” but then discovered I don’t have all ingredients available,so ended up making mjadara with fried onions and some salad.

Fish and Hash-browns !!

Hello everybody.

Weekend almost over 🙁
  Was on my way back from an errand with my son, stopped by Ocean fish store upon his request, wanted fish and chips for lunch.
  I always try to avoid deep frying so will cook fish in the oven and make hash browns instead of fries. I even removed fish fillets thin ends to make some rice on the side.

Ingredients and method:
* fish fillets.
* potatoes.
* onion.
* basmati rice.
* whole walnuts.
*lemon juice, salt, pepper, cumin, garlic for seasoning.
* flour , beaten egg and breadcrumbs for coating the fish.
* cinnamon, all spice, cardamom, nutmeg for seasoning of rice.

* cut fish to big pieces and leave thin and small ends for the rice.
* season flour then coat fish with it.
* dip in eggs then breadcrumbs.
* line them in a well oiled pan and cook in a medium heated oven for 25-30 minutes.
* grate potatoes ,add salt and pepper then mix well and leave in a sieve till all water is out.
* in a nonstick pan heat some oil then make heaps if potato mix. You can use metalic moulds to make a nice shape.
* flip on both sides till golden.

As for the rice:
* saute flour coated fish in some oil till golden then remove from pan.
* in the same oil saute finely sliced onions till tender.then add rice seasoning.
* add a bit of water to onions and leave to simmer 10 minutes.
* add walnuts and fish fillets.
* wash rice and add on top.
* cover with water till above rice by 1 inch.
* add more spices if you desire so as rice is brownish.
*simmer on low heat till done.
* serve with tahini sauce and toasted pitta bread.

Banana Bread.

Morning everybody.

A rule in my kitchen NEVER throw food away. I always try to give it away or use almost ruined or ripe veggies and fruits to do jam or cake or whatever.
Today bananas from Saturday grocery shopping are blackening so banana bread it is.

Turned to my facebook Mary for the best recipe,  kindly she sent me this one.really easy and yummy.

Ingredients and method:
* 4-5 ripe bananas.
* 3/4 cup sugar.
* 1 egg.
* 1/3 cup vegetable oil.
* 1 tsp vanilla.
* 1 tsp baking powder.
* 1 1/2 cups flour.
* mash bananas with a fork add all ingredients and mix well.
* pour batter in a greased loaf pan.
* bake in a medium heated oven for 1 hour.

Perfect for a healthy snack or even breakfast.

Spinach with Rice.

Hello everybody.
Though everybody don’t like spinach at home specially my husband but I couldn’t resist but buy the fresh green bunch. I like it cooked with meat once in a while plus it’s very healthy and full of nutrients and iron.

Ingredients and method:
*fresh cleaned chopped spinach.
* minced meat.
* garlic and onion. Finely chopped.
* salt, pepper , all spice and lemon juice.

* saute meat till almost done with olive oil.
* add onions and garlic, saute till tender.
* add spinach and all seasoning.
* leave to simmer till done 35-40 minutes.
* serve with rice, lemon juice and pickles.

Light Healthy Lunch.

Hello everybody.

Family gatherings are truly wonderful , however specially in our culture,, family time means lots and lots of eating. Too many kinds and invitations.
So cause today is free and we have a big lunch tomorrow also..I cooked a light meal, used to make it when my son was on diet last year. It’s basically chicken breasts with garlic, lemon and oregano with sauteed veggies on the side.
I also had some extra courgettes so I made a small dish of cooked pulp of it. (حفاره او لب الكوسا ).
Ingredients and method:
* 2-3 chicken breasts sliced or whole.
* 3 cloves garlic.
* lemon juice.
* salt, pepper, oregano.
* vegetables : carrots, mushroom, broccoli, peppers, corn, courgettes…etc

* heat some olive oil in a skillet or wide covered pan.
* add chopped garlic the chicken, keep turning them till golden.
* add all coarsely chopped veggies.
* season with salt.oregano,  all spice.
* cover and lower heat to minimum. Leave till vegetables are done then sprinkle lemon juice all over.

As for courgettes..it’s not necessarily to use only pulp, I usually bring big courgettes and grate them all.
Cook them till tender,you might need a bit of water, then add crushed garlic, salt, dried mint and olive oil..leave on low heat for 15-20 minutes.
Very light healthy appetizer that can be done now during our dear Christian brother’s fasting.
