Greens and Homemade Bread.

Hello everybody.

Seems all green veggies and herbs grew earlier after the snow cause I found some fresh fava beans and coriander ,beautiful fresh bunch of chicory and crisp green onions. All great with the ewe yogurt I brought from Irbid on Thursday.

I also got enthusiastic and decided to bake some bread like the one I did with msakhan, an incredible taste and as usual boys ate two loaves alone before I was done, this time I baked it on a grilling pan I use for burgers and steaks and it turned out great 🙂

Thyme Tomatoes and Green Onions Pastries.

Hello everybody.

Mom and my lovely niece visited me this morning, great timing cause I was about to begin making some pastries so a helping hand was a blessing.

I made three kinds of fillings, cheese, green fresh thyme with onions, tomatoes, sun dried tomatoes and olive oil plus some stripped green onions that I always make like swirls . really yummy and great with labaneh dip .

While we were working my niece made a small strawberry cake and decorated it, it came out a beautiful all over pinkish lively cake, her favorite color of course.

Well, hope all is ready for the snow coming tomorrow,I went grocery shopping today and people were crazy buying piles of stuff, hope we won’t be stuck for a long time like last year, fingers crossed !!!!!

Stuffed Mushrooms and Chicory Salad.

Hello everybody.

Long shopping day as usual and no time to cook something so thought I’ll fix anything quickly.

I have some ready from store stuffed mushroom also from Miles that I didn’t make yesterday, so they were a good rescue, not bad but as my boys said the ones we make at home are much tastier.

I also made a bowl of chicory salad (هندباء او علت) ,I posted this dish long time ago, this plant is a favorite dish to many, cooked or as salad though the ones freshly picked from Ghor or farms are much more aromatic and original than the bunches bought from stores, but these will do for now, it’s a simple salad done with chopped chicory, very well washed cause it’s usually fill with dirt, then you add green onions, lemon juice and salt.

Nice quick lunch, will make it up tomorrow for sure.

Lazy Friday:)

Hello everybody….typical sunny lazy Friday.
We all got up late..and I woke up with a bad back pain,, so my lovely family said no cooking today.
Best solution for a late breakfast and no lunch is  hummus, falafel, fatteh, fool meal (حمص.فﻻفل.فته.فول ).
Well hummus, fatteh and falafel are bought..some people buy fatteh also….though it’s more delicious if done at home….well frankly I never did..but will bring the recipe from my uncle…who’s famous of doing the best fatteh and post it for you.
As for fava beans (فول مدمس ) I usually make at home.
I use a can of cooked fava beans.heat it very well then add it to a mixture of chopped green or dry onions.chopped tomatoes. Fresh mint leaves.juice of half a lemon.1 small spoon of cumin powder.dried mint.paprika.salt,, a spinkle of hot chilli and olive oil.mix heated beans with and…….Bon Appetit.

Enjoy your weekend♡♥♡♥

Pasta dish for this week: lasagna

I noticed that all family members enjoy pasta of every kind and flavor…I myself , cooks a kind of pasta every week or 10 days.
Today I made lasagna…simple basic recipe..with white sauce..and minced meat with tomato sauce,,, I added some vegetables to the meat sauce..peas, carrots, sweet corn…this is optional of course.

A tip my best friend Sireen once told me is to add one tablespoon of flour to the tomato sauce mixture so as to thicken it.
I also added dried oregano and a big spoon pesto sauce……so yummyyyy.
I also made a basic salad  with fresh green onions and mint leaves.
