Hello everybody.

Yesterday I met a sweet lady who asked me if I make no egg and milk cake cause as you know it’s fasting time now and she had trouble finding one for her mom on Mother’s day.

Her question intrigued me to look for such recipe which led me to many. Most famous ones are called “big depression” or ” crazy cake” or “wacky cake”. Reason for this name goes back to the great depression time when eggs and dairy products were available so people had to use other resources to make cake. Result was really good and light, I changed a bit in the recipe to add up the flavor and topped it with pineapples and roasted coconuts.
