Delicious Family Lunch.

Hello everybody.

Hosted my dear cousin for lunch today, as I always say when you cook with love for special people everything will taste amazing.

Made fresh green stuffed vine leaves and courgettes, fava beans fatteh, rocca and cucumber yogurt salads.

though it’s usually done with fish or shrimps but unfortunately I didn’t have the time to buy some so I made it with garlic, pesto, sun dried tomatoes and lemon zest.So yummy and fresh.

Today’s morning was also extra special, breakfast with my besties, can’t get enough of these warm gatherings,always full of laughter and old memories, I always thank God for having the best friends in the world.

Best Birthday Party.

Hello everybody.

Yesterday we celebrated my nephew’s first birthday, our bundle of joy is one now.

Theme of the party was teddy bears, cake, cupcakes and all ornaments were brown and yellow. All done by my talented sister in-law, very elegant and cheerful.

ٍStrawberry Cake.

Hello everybody.

Invited to another breakfast at my cousin today,very busy eventful week right?

Just this morning I decided to do this cake to take with me, my friend’s famous recipe ( Suhaila’s cake I call it) usually done with cherries but strawberries will do .

Very delicious as usual ,all gone in minutes.

 

Ingredients and method:

* 5 eggs separated.

* 2 coffee cups (small like espresso cups) (فنجان قهوه ) vegetable oil.

* 4 small cups sugar.

* 5 small cups flour.

* juice and zest of a lemon.

* 1 tsp vanilla.

* 2 tsp baking powder.

* pinch of salt.

* cherries or strawberries sliced.

* beat egg yolks,oil,2 cups of sugar,lemon zest and juice,baking powder and flour together very well, batter will be a bit thick in texture,

* beat egg whites,remaining 2 cups of sugar and vanilla very well till frothy and creamy.

* fold in batter into egg white mixture and mix well but not hard.

* pour mixture in greased oven pan,then arrange pitted cherries on top.

* bake in a medium heated oven for 10-15 minutes then lower heat to minimum till top is golden.

* cool then add icing sugar as decoration on top.

Kofta with Tomatoes.

Hello everybody.

Waiting for my sister in-law and her son for lunch, upon his request his grandma made freekeh and I made kofta with tomatoes peppers and potatoes.

Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Chocolate Crinkles

hello everybody.

Heading North to Irbid today to visit my sister in law’s and go to a big girl’s only gathering,so excited.

 

A small loving homemade gift would be nice to take with me ,so I made some rock cookies and crinkles,first time to do them and luckily they turned out just perfect or frankly ( and I’m not bragging) they’re beyond amazing.

 

Recipe is easy and light,no butter at all.

 

* 3/4 cup vegetable oil.

* 3/4 cup cocoa

* 1 cup sugar.

* 4 eggs.

* 2 tsp baking powder.

* 1 tsp vanilla.

* 2 cups flour.

* 1 cup confectionery sugar.

* Beat oil,cocoa and sugar well then add eggs one at a time.

* add vanilla ,baking powder and flour and mix well till you get a stiff dough.

* refrigerate for 2-3 hours.

* form into balls then roll each in the fine sugar .

* line in a greased pan or use wax paper or silicon sheets.

* flatten a bit with a fork then bake for 8-10 minutes in a medium heated oven.

* cool down then store in a cookie jar or closed tin so as not to harden.

Anise Bars.

Hello everybody.

Though we’re Mansaf-ing today but it’s not me cooking so I baked these bars this morning,good choice with coffee as a quick breakfast for my son before leaving to college everyday.

Recipe is very easy almost a simple cake but you bake it in a big wide pan then slice it when done and ready bake or toast bars till crunchy.

Really yummy.

Ingredients:

* 4 eggs.
* 1 cup sugar.
* 1/2 cup olive oil.
* 1/2 cup vegetable oil.
* 2 big spoons anise powder.
* 2 big spoons anise seeds.
* sesame seeds
* 2 tsp baking powder.
* 1 tsp vanilla.
* 2 cups flour.

Method:
* mix eggs, vanilla, sugar with electric mixer till fluffy. Add rest of ingredients.
* sprinkle bottom of pan with sesame seeds, add the cake mixture and bake in medium oven for 30 minutes or dry in center.
* when cooled cut to slices and roast again till golden from both sides.( مثل شكل القرشله)
* leave to cool completely then keep in well closed jar or tin.

Teramisu.

Hello everybody.
Have a gathering this evening for my sister in-law’s family so I prepared several things one of them is teramisu since I have some mascarpon cheese fresh from Italy that I’d rather use before it’s spoiled.

Cause I don’t prefer using raw eggs though the original recipe requires it, I substituted it with a pack of cream caramel powder, gave it the same color and texture and result was super.

You can find many recipes for it,here’s one option that is very tasty

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream,condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top.

Or the one I made today:

* 200 gm Mascarpon cheese.

* 6 pieces Kiri.

* 1 sachet whipping cream ( Dream Whip).

* 1 pack of cream caramel powder.

* 1 1/2 pack lady fingers biscuits.

* strong espresso or Nescafe.

* beat cheeses and cream very well till smooth then layer biscuits topped with coffee then cream in a pyrex or any mold you like.

* cool in fridge for 3-4 hours or overnight.

Muhalabieh with Caramel.

Hello everybody.

 

Had this recipe in my book since Ramadan,a friend of mine made it and I took it right away in order to make it then but I didn’t have any chance,so today when the milkman came it crossed my mind and I bought some fresh milk and did it at last.

 

Very easy cooling recipe and the caramel adds a lot to the taste for sure.

 

Ingredients and method:

Note :this quantity yields 12 small jars or pots.

* 6 cups milk.

* 6 big tablespoons starch.

* 1 tsp mistaka finely crushed with 1/4 cup sugar so as not to stick to the grinder.

* 1 tsp rose water (optional)

* more sugar also optional cause the caramel sauce is sweet.

* leave one or two cups of milk aside and mix starch in them very well.

* add to other quantity,mix all very well then boil till it thickens.

* add mistaka and sugar and the rose water.

* pour in one big bowl or small glass bowls or jars.

* cool in the fridge for at 2-3 hours .

 

Caramel:

* 1/2 cup sugar melted till caramelized and golden.

* 1/2 cup water added very carefully to the browned sugar.

* stir very well and leave to simmer a bit till it’s thick.

* Before serving flip the muhalabieh in a slightly deep dish then garnish with crushed pistachios and drizzle with the caramel sauce.
