Roasted Cauliflower.

Hello everybody.

Saw this recipe on my Facebook friend Mary’s timeline thought I’ll try it today, got a tiny cauliflower to do the test, well it turned out really good, light appetizer with a spicy sour taste, though as usual reality is never like the photo posted,Photoshop is so mean sometimes!

You simply marinate a whole cauliflower is yogurt, olive oi,lemon zest and juice ( forgot them in the photo) ,salt, pepper, chili powder and cumin. Then you place it in a deep pan and bake it in a well heated oven till brown and crisp from the outside, serve with green salad or as appetizer.

Well lunch was chicken tikka masala, got a ready mix this time, really good actually!

Lazy Friday:)

Hello everybody….typical sunny lazy Friday.
We all got up late..and I woke up with a bad back pain,, so my lovely family said no cooking today.
Best solution for a late breakfast and no lunch is  hummus, falafel, fatteh, fool meal (حمص.فﻻفل.فته.فول ).
Well hummus, fatteh and falafel are bought..some people buy fatteh also….though it’s more delicious if done at home….well frankly I never did..but will bring the recipe from my uncle…who’s famous of doing the best fatteh and post it for you.
As for fava beans (فول مدمس ) I usually make at home.
I use a can of cooked fava beans.heat it very well then add it to a mixture of chopped green or dry onions.chopped tomatoes. Fresh mint leaves.juice of half a lemon.1 small spoon of cumin powder.dried mint.paprika.salt,, a spinkle of hot chilli and olive oil.mix heated beans with and…….Bon Appetit.
