Chocolate Hazelnut Caramel Thumbprints.

Hello everybody.

Testing new cookies for Christmas orders, came across this recipe the other day and thought it’ll be a good choice and i was right.

Elegant crispy from the outside cookies , so easy to make and you can always make many variations of them. I mean you can envelope them with either hazelnuts or almonds and fill them with caramel or Nutella , all really tasty for sure.

Ingredients and method:

* 3/4 cup butter.

* 1/2 cup sugar.

* 1 large egg separated.

* 1/2  cup flour.

* pinch of salt

*1/2 cup cocoa.

*2 tablespoons cold water.

* 3/4 roasted finely crushed nuts.(hazelnuts or almonds)

* caramel or Nutella

* beat egg yolk,butter,sugar and salt till creamy.

* add flour and cocoa  knead till you form a ball.

* form small balls then press them  with your thumb a bit in the middle.

* beat the egg white and coat cookies with them.

* roast and crush finely the nuts then coat cookies with them as well.

* bake in a moderate heated oven for 13-15 minutes.

* when cooled add a little bit of caramel  in the thumbprint.

I also made super easy coconut Maltesers balls but this time I roasted the powdered milk till golden , added a caramel taste to them .

Ingredients and method:

*2 cups dry milk powder.

* 2 cups coconut.

* 1/2 cup icing sugar.

* 1 pack cream.

* 1 tablespoon butter.

* 3 packs Maltesers.

* Note: I added some orange zest,goes well with it.

* Mix all ingredients together till they’re like a paste then cover each Maltesers ball with it and roll into a ball .

* cover with coconut and leave to cool in the fridge.

To fill the box for today”s order I added some rock cookies and lemon crinkles I made yesterday, turned out a beautiful colorful Christmas gift.

Almond Tuilles.

Hello everybody.

Today’s order was various, both salty and sweet stuff. One was za’tar puffs and cheese cookies the other was chocolate,ginger crinkles and sable.

Sometimes when the order is for a close friend I love to try something new for testing and feedback,today I did these super easy crispy thin almond cookies. So east to make though you must be careful baking them, next time i’ll swirl them when hot to give them a nicer shape.

Ingredients and method:

  • 3 large egg white.
  • 1 tsp vanilla.
  • 3/4 cup sugar.
  • 1/3 cup vegetable oil.
  • 1/4 cup flour.
  • 1/2 cup chopped or slivered almonds.

*Beat egg white till all white and stiff .

*Add vanilla.sugar ,oil and flour.

*Fold in almonds slowly, don’t over beat or mix.

* Grease a biking tray well with oil then some flour. ( very imp to grease well cause cookies tend to stick)

* add a tablespoon of batter then flatten it with back of spoon into circles.

* In a 180 degrees heated oven bake cookies for 10 minutes or till golden.

* leave to cool , you can swirl them while hot but you have to be very careful not to break them.

Peanut Butter Snickers Chocolate Chips Cookies.

Hello everybody.

Today’s order is for a group of lovely teachers as a small giveaway, they ordered five different cookies for each.

Made the usual three kinds of crinkles, rock cookies and these cute little heart shaped ones of peanut butter and chocolate chips but added Snickers chunks in them, so yummy and cute.

Though teachers really deserve more than this but I hope love and cherish for their efforts are tasted and felt in my cookies, God bless all teachers around the world.

Ingredients and method:

* 1/2 cup butter ( reduce it a bit if using heavy chocolates, I used chocolate chips and 4 small Snickers bars)

* 1/2 cup peanut butter.

* 3/4 cup brown sugar.

* 1 egg.

* 2 tablespoons milk.

* 1 tsp vanilla.

* 1/2 small spoon baking soda.

* 1/2 tsp baking powder.

* 1 3/4 cups flour.

* 3/4 cup chocolate chips or crushed ones of any kind.

* Mix butters and sugar well till creamy then add egg,vanilla,milk.

* add flour,baking soda and powder then last thing add the chocolates.

*Shape into balls then flatten them a bit,usually I use a coffee cup bottom.

* bake in a medium heated oven for 10-13 minutes or till bottoms are golden.

* cool then keep in cookie jar or tightly closed tin.

These will sure put a big smile on a child’s face specially with a hot chocolate in a cold day 🙂

Full Lunch Order.

Hello everybody.

Today’s order was a full lunch for a dear friend.

She ordered spread and mini kibbeh, grilled cheese salad. Dessert was assorted cookies and crinkles and chocolate balls.

Rice With Veggies and Avocado Dip.

Hello everybody.

Long hectic day, even lunch  became at dinner time!

I made rice with cubed meat and lots of veggies like carrots,beans,peppers, mushrooms,onions and a small tomato. Very tasty.

On the side I made an avocado dip, mashed two ripe avocados added yogurt, lemon,tahini sauce and salt, topped with tomatoes and chili powder.

Assorted Cookies, Chocolate Balls and Za’tar Puffs.

Today’s order was lovely, assorted cookies included chocolate and lemon crinkles, rock cookies and date rolls plus some za’tar puffs.

Additional small gift for my new client a box of chocolate balls hope she’ll like them.

This morning I completed an order of assorted cookies, various kinds for a new client.

I made three kinds of crinkles,chocolate, lime and molasses. Rock cookies, cardamom and chocolate chips.

All was delivered on time.

Molasses Ginger Soft Crinkles.

Hello again.

Here’s the recipe of the other kind I made,molasses and ginger, taste is terrific by the way both sweet and sharp . I may add more ginger next time to sharpen the flavor.

 

Ingredients and method:

*3/4 cup butter.

*3/4 cup brown sugar.

*1 egg.

* 1/4 cup molasses.

  • 1 tsp ground ginger.
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • pinch of salt
  • pinch of nutmeg

* 2 tsp baking powder

*2 1/4 cups flour.

*granulated or raw sugar for coating.

 

  • beat butter,sugar well till creamy.
  • add egg and vanilla.
  • add all other ingredients consequently.
  • cool for 2-3 hours.
  • roll into balls then coat with sugar
  • flatten them a bit with your fingers
  • bake in a medium heated oven (180 c) for 10-13 minutes only.
  • cool and store in a cookie jar.

Lime Coconut Crinkles.

Hello everybody.

Another batch of chocolate crinkles today  for a friend of mine, crossed my mind last night to try other kinds, a chance to let people try them and give me feedback for future plans.

Found many recipes in various sites but this one plus the molasses ginger ones caught my attention, lime coconut crinkles are so lemony and full of flavor much better than lemon ones I did before, those were good but guess needed more flour , a stupid mistake  then !

Ingredients and method of lime coconut crinkles:

  • 6 tablespoons butter.
  • zest and juice of 1 lime .
  • 1/2 cup sugar.
  • 3 tablespoons coconut flakes.
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp baking powder,
  • 2 cups flour.
  • caster sugar for coating.

  • Beat sugar,zest of lime and butter well till creamy.
  • add egg,vanilla,lime juice,coconut flakes.
  • add flour and baking powder.
  • cool in the fridge for 2 hours.
  • form into small balls then coat with caster sugar.

Red Velvet Crinkles.

Hello everybody.

Invited to a breakfast gathering this morning,so I thought a small gift box filled cookies would be great. Any homemade food made with love even if simple and small would mean a lot.

I prepared dough for both chocolate  and red velvet crinkles yesterday and baked them this morning.

Red velvet ones are first timers but I did the chocolate ones before, always a success.

Ingredients and method of red velvet crinkles :

* 1/2 cup butter.
* 1 1/2 cups suger.
* 1 pack cream cheese.
* 2 eggs.
* 3/4 cup cocoa.
* 2 1/4 cups flour.
* 1 tsp vanilla.
* 1 1/2 tsp baking powder.
* pinch of salt.
* 1 tsp red food coloring.
* 1 cup caster sugar.

* beat butter and sugar well till creamy then add cream cheese and whisk well.
* add eggs and vanilla.
* whisk in flour, cocoa and baking powder.
* cool dough in fridge for 4 hours.
* make small balls and cover with caster sugar then arrange all on cookie backing sheet.
* press each ball a bit so as cookies are crinkled.
* heat the oven well then decrease temperature till medium and bake for 10-13 minutes exactly.
* leave to cool well then store in a well closed jar so as not to dry.

Very easy and good looking though I prefer chocolate, taste is more rich.

Here is a reminder of the chocolate crinckles recipe

* 3/4 cup vegetable oil.

* 3/4 cup cocoa

* 1 cup sugar.

* 4 eggs.

* 2 tsp baking powder.

* 1 tsp vanilla.

* 2 cups flour.

* 1 cup confectionery sugar.

* Beat oil,cocoa and sugar well then add eggs one at a time.

* add vanilla ,baking powder and flour and mix well till you get a stiff dough.

* refrigerate for 2-3 hours.

* form into balls then roll each in the fine sugar .

* line in a greased pan or use wax paper or silicon sheets.

* flatten a bit with a fork then bake for 8-10 minutes in a medium heated oven.

* cool down then store in a cookie jar or closed tin so as not to harden.
