Cheesy Seperable Loaf.

Hello everybody.

On the occasion of my son’s birthday yesterday I did his favorite dish of all, stuffed courgettes with tomato sauce, still love it since he was a one year old till now, many happy returns my young man.

Another thing he always asks for is something easy to eat for breakfast, so today I tried this way, you make a simple dough  ( 3 cups flour,1 tsp yeast,1 tsp sugar ,1 tsp salt,1/2 cup oil and warm water to make a firm dough) shape it as a big rectangle then spread any kind of cheese, herbs you like( you may add garlic,parsley,fresh oregano ). Cut it all to even squares then stack them all on top of each other then flip them on the side in a greased loaf pan.

Leave to rise well then bake in a medium heated oven for 30–40 minutes.

Really easy nice way to serve a breakfast or appetizer.

Fresh Stuffed Courgettes.

Hello everybody.

My hubby started planting some veggies in the farm in a small scale for household use.

First crop started yesterday, a big box of fresh courgettes, separated big ones for sautéed use, mediums stuffed today and cooked in tomato sauce and small ones to stuff with meat for ablama, I’ll prepare  and freeze them for Ramadan, a rescue in a busy or tiresome day.

Ftoor Invitation.

Hello everybody.
Today we’re invited at my sister-in-law’s house.

Delicious various dishes, cheese rolls, courgettes in yogurt, steaks with gravy, eggs and boiled eggs, makmoura and a big fatoush.
I made small qatayef (عصافيري ) with cream and Nutella and took it with me.
Lovely evening and delicious meal.missing you Didi my dear♥.

Veal with Mushroom Cream Sauce.

Hello everybody.

Back to normal routine after a long vacation, kids will want a good satisfying meal after school for sure.

My cousin posted this dish on my Facebook group last week and I promised to make it soon,though he made made it with chicken but today I used veal, but  same other ingredients.

Turned out absolutely delicious,only guilty thing is that recipe contains fresh cream and butter,won’t be the same without them, though tastes great but I always try to avoid these fatty ingredients as much as possible. Guess once in a while won’t hurt don’t you think ?

Ingredients and method:

* Veal steaks.

* Fresh cream.

* Mushrooms.

* salt,pepper,all spice,ginger,garlic powder and oregano for seasoning.

* 1 maggi cube.

* mozzarella cheese.

* vegetables : carrots,courgettes,cherry tomatoes,sweet peppers, broccoli,corn and potatoes.

 

* Season veal with all mentioned and leave for 1 hour.

* saute veal with some butter on both sides till almost done.

* remove to another pan then saute sliced mushrooms till tender.

* add fresh cream and maggi cube and leave to simmer 10  minutes then pour over veal and leave all to simmer on low heat or in the the oven till done.

* add mozzarella cheese on top to melt before serving.

* bake veggies with a drizzle of oil in the oven.

* bake foiled potatoes and serve it with sour cream on the side.

* steam broccoli florets then cover them directly with iced water so as to keep the green color.

I don’t like to brag but it really  looks and tastes better than any fine restaurant !!!!

Kofta with Vegetables.

Hello everybody.
  Weekend almost over, hope everybody relaxed and boosted for next week.
  My husband brought various vegetables from Ghor Thursday so today I made kofta or kebab fingers with a selection of veggies, as I recall some people call this ” Masfoufeh” meaning lined up cause of the way you arrange it in the pan. Please confirm this info if correct or not.
  I also made Fatoush, kind of salad with toasted bread and summaq.
  Plus, I bought some fresh fruits and mixed them into a great refreshing cocktail.
Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Fatoush:
This salad is of Libanese origin, it’s basic salad with the addition of radishes,watercress (بقله ), toasted pitta bread with summaq, pomegranate sauce, lemon and olive oil as dressing.
 
I was lucky my best friend came by for coffee after lunch, great with some dark chocolate.

Courgettes in White Sauce ( كوسا بالبشاميل).

Hello everybody.

Usual  Saturday morning, went grocery shopping and  found lovely fresh courgettes,plus a new butcher just opened near the grocery store I  go to,still bright new and meat looks really fresh,so thought why not try it?

So lunch ended up to be courgettes with minced beef and bachamel or white sauce. I guess this is an Egyptian dish,actually I learned how to do it from the old Egyptian landlady  my late father used to rent  at her house while studying  in Alexandria/Egypt. She used to come visit us often  and taught us this dish. May God rest their souls both .

Ingredients and method:

* 2-3 kg medium sized courgettes.

* 1/2 kg minced beef.

* 1 onion,finely chopped.

* for the white sauce: butter,milk,flour.

* mozzarella or kashkaval cheese .

* salt,pepper,all spice.

 

*Peel courgettes but not all (lines) then sprinkle with salt and leave 15 minutes till excess water is out.

* saute them with a bit of oil or as i usually make them cover and put them in microwave for 5-7 minutes till they’re a bit tender.

* saute meat till done,add onion,salt,pepper,all spice and /or a bit pomegranate sauce if you like.

* make the white sauce by melting butter then flour and stir till golden then add milk and stir very well. Add seasoning and leave to boil till it thickens.

* layer courgettes in a Pyrex or oven pan, add white sauce then cooked meat.

* repeat layering courgettes and white sauce on top.

* bake covered in a medium heated oven for 40-50 minutes then add cheese on top and toast it till it melts.

Must mention that this is my big bro’s FAVORITE dish,will definitely invite him to launch or keep  his share !

Ratatouille.

Hello everybody.

Today’s dish is French , it means tossed vegetables. We usually do make a similar one but with big lamb meat pieces, late grandmas used to cook it, called (طباخ روحو ) which means “it cooked itself” cause just like Ratatouille vegetables are left on very low heat to simmer and become a well done stew.
Well today kids don’t want anything with meat or chicken, so I made ratatouille plus a big bowl of pasta with yoghurt and some French fries.

Ingredients and method:
*Ratatouille:
* 1 large eggplant cut to cubes.
*2-3 courgettes.cubed.
* 1 chopped onion.
* 2-3 chopped cloves of garlic.
* 1 chopped sweet pepper.
* 2 large chopped tomatoes.
* 1 chilli pepper or chilli powder.
*olive oil.

*saute onions and garlic in oil then add chilli.
* add courgettes then peppers.
* fry eggplants till golden, leave on paper towel till dry then add over mixture
*add tomatoes.
*season with salt and pepper.
*leave to simmer till all homogeneous and little liquid remains.

*Pasta with yoghurt:
* 1 pack penne pasta.
* 1 yoghurt can .
*2-3 garlic.
* 1 spoon dried mints.
* mix yoghurt with crushed garlic, mint, salt.
* cook pasta then saute with some butter or oil.
* just minutes before you serve mix together and heat a bit.
* decorate with pine nuts or almonds.

Grilled Vegetables with Kofta .

Hello again.

Lunch now!!!!
I took out some kofta from freezer last night, it was an extra amount from last time, so it won’t be enough for all, needs something extra to go with it.
  A quick solution , took out all veggies in fridge to grill them plus a big bowl of salad!

Ingredients and method:
* all sorts of veggies cut to large slices or chunks.
* green onion, garlic, lemon juice and oregano.
* butter and olive oil.
* salt and pepper.

* in a thick cast iron pan (preferably one that’s lined) heat some butter and oil.
* add veggies in turns till tender and stripes show on them.
* mix lemon juice, chopped onion and garlic with oregano, salt and pepper.
*sprinkle all over veggies then leave to simmer for 20-30 minutes on low heat.
* serve with any kind of meat or chicken.
* I made a delicious rocca, mushroom, cherry tomato, walnuts salad with vinaigrette dressing.

Light Healthy Lunch.

Hello everybody.

Family gatherings are truly wonderful , however specially in our culture,, family time means lots and lots of eating. Too many kinds and invitations.
So cause today is free and we have a big lunch tomorrow also..I cooked a light meal, used to make it when my son was on diet last year. It’s basically chicken breasts with garlic, lemon and oregano with sauteed veggies on the side.
I also had some extra courgettes so I made a small dish of cooked pulp of it. (حفاره او لب الكوسا ).
Ingredients and method:
* 2-3 chicken breasts sliced or whole.
* 3 cloves garlic.
* lemon juice.
* salt, pepper, oregano.
* vegetables : carrots, mushroom, broccoli, peppers, corn, courgettes…etc

* heat some olive oil in a skillet or wide covered pan.
* add chopped garlic the chicken, keep turning them till golden.
* add all coarsely chopped veggies.
* season with salt.oregano,  all spice.
* cover and lower heat to minimum. Leave till vegetables are done then sprinkle lemon juice all over.

As for courgettes..it’s not necessarily to use only pulp, I usually bring big courgettes and grate them all.
Cook them till tender,you might need a bit of water, then add crushed garlic, salt, dried mint and olive oil..leave on low heat for 15-20 minutes.
Very light healthy appetizer that can be done now during our dear Christian brother’s fasting.
