Hello everybody.

This morning I completed an order of assorted cookies, various kinds for a new client.

I made three kinds of crinkles,chocolate, lime and molasses. Rock cookies, cardamom and chocolate chips.

All was delivered on time.

Molasses Ginger Soft Crinkles.

Hello again.

Here’s the recipe of the other kind I made,molasses and ginger, taste is terrific by the way both sweet and sharp . I may add more ginger next time to sharpen the flavor.

 

Ingredients and method:

*3/4 cup butter.

*3/4 cup brown sugar.

*1 egg.

* 1/4 cup molasses.

  • 1 tsp ground ginger.
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • pinch of salt
  • pinch of nutmeg

* 2 tsp baking powder

*2 1/4 cups flour.

*granulated or raw sugar for coating.

 

  • beat butter,sugar well till creamy.
  • add egg and vanilla.
  • add all other ingredients consequently.
  • cool for 2-3 hours.
  • roll into balls then coat with sugar
  • flatten them a bit with your fingers
  • bake in a medium heated oven (180 c) for 10-13 minutes only.
  • cool and store in a cookie jar.

Lime Coconut Crinkles.

Hello everybody.

Another batch of chocolate crinkles today  for a friend of mine, crossed my mind last night to try other kinds, a chance to let people try them and give me feedback for future plans.

Found many recipes in various sites but this one plus the molasses ginger ones caught my attention, lime coconut crinkles are so lemony and full of flavor much better than lemon ones I did before, those were good but guess needed more flour , a stupid mistake  then !

Ingredients and method of lime coconut crinkles:

  • 6 tablespoons butter.
  • zest and juice of 1 lime .
  • 1/2 cup sugar.
  • 3 tablespoons coconut flakes.
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp baking powder,
  • 2 cups flour.
  • caster sugar for coating.

  • Beat sugar,zest of lime and butter well till creamy.
  • add egg,vanilla,lime juice,coconut flakes.
  • add flour and baking powder.
  • cool in the fridge for 2 hours.
  • form into small balls then coat with caster sugar.
  • line up cookies on wax paper then flatten them a bit with your fingers.
  • bake in a medium heated oven (180 C) for 10-13 minutes only.
  • leave to cool then keep them in a closed jar so as not to dry.

Red Velvet Crinkles.

Hello everybody.

Invited to a breakfast gathering this morning,so I thought a small gift box filled cookies would be great. Any homemade food made with love even if simple and small would mean a lot.

I prepared dough for both chocolate  and red velvet crinkles yesterday and baked them this morning.

Red velvet ones are first timers but I did the chocolate ones before, always a success.

Ingredients and method of red velvet crinkles :

* 1/2 cup butter.
* 1 1/2 cups suger.
* 1 pack cream cheese.
* 2 eggs.
* 3/4 cup cocoa.
* 2 1/4 cups flour.
* 1 tsp vanilla.
* 1 1/2 tsp baking powder.
* pinch of salt.
* 1 tsp red food coloring.
* 1 cup caster sugar.

* beat butter and sugar well till creamy then add cream cheese and whisk well.
* add eggs and vanilla.
* whisk in flour, cocoa and baking powder.
* cool dough in fridge for 4 hours.
* make small balls and cover with caster sugar then arrange all on cookie backing sheet.
* press each ball a bit so as cookies are crinkled.
* heat the oven well then decrease temperature till medium and bake for 10-13 minutes exactly.
* leave to cool well then store in a well closed jar so as not to dry.

Very easy and good looking though I prefer chocolate, taste is more rich.

Here is a reminder of the chocolate crinckles recipe

* 3/4 cup vegetable oil.

* 3/4 cup cocoa

* 1 cup sugar.

* 4 eggs.

* 2 tsp baking powder.

* 1 tsp vanilla.

* 2 cups flour.

* 1 cup confectionery sugar.

* Beat oil,cocoa and sugar well then add eggs one at a time.

* add vanilla ,baking powder and flour and mix well till you get a stiff dough.

* refrigerate for 2-3 hours.

* form into balls then roll each in the fine sugar .

* line in a greased pan or use wax paper or silicon sheets.

* flatten a bit with a fork then bake for 8-10 minutes in a medium heated oven.

* cool down then store in a cookie jar or closed tin so as not to harden.

Orange Coconut Cookies.

Hello everybody.

Had a small gathering this morning, didn’t have too much time but managed thank God.

A cheese platter with dried fruits, some veggies and za’tar puffs is always an elegant easy thing to do, so that was the salty part.

As for the sweets I made a dry fruits cake last night and since I’m baking the puffs thought I’d do these old times favorite cookies.

These were a big hit back when we were kids, mom used to make them all the time,along with the pineapple upside down cake and jello with apples, life was very simple and basic back then right?

Ingredients and method :

* 2 eggs.
* 1 tsp vanilla.
* 2 tablespoons butter.
*1 cup sugar.
*zest and juice of one big orange.
*3 cups coconut flakes.
* 2 teaspoons baking powder.
* 2 cups flour.

*beat sugar and butter till smooth and creamy.
* add eggs,vanilla, zest and juice.
* add coconut, flour and baking powder.
* dough must be neither soft nor tough so you can easily scoop it with two small spoons.
* line your cookies on a cookie sheet then bake them in a moderately heated oven for 10-13 minutes.
Note: be careful not to over bake them or else they’ll be dry.
*cool and store in a well sealed jar.

Earl Grey Cookies.

Hello again.

Was searching for something new and different to make for Eid then came across these elegant cookies, first trial was yesterday but thought I’d change some things cause they were too oily and sweet ,so a moderated one came up today and it was great,crisp and light.

I also did my usual cardamom cookies,love those cause they’re so easy to make.

 

Ingredients and method of Earl Grey cookies:

  • 3/4 cup butter.
  • 1/2 cup sugar.
  • 2 egg
  • 1/2 tsp vanilla.
  • 2 tsp fine earl Gray tea ( I used content of 3 bags)
  • 1/4 tsp salt.
  • 1/2 tsp baking powder.
  • 2 cups flour.

 

Beat sugar and butter well till light in color and creamy.

Add eggs and vanilla and continue baking.

Add flour,tea leaves and baking powder , dough will be soft a bit and sticky it’s ok.

Cool in fridge for 1 hour then roll to a big rectangle and cut to any shape you like using the cookie cutters.

NOTE: for easier handling roll dough between wax paper so as to avoid sticking.

NOTE: if dough became too soft put it again in fridge , or cut it in batches not all at one.

Heat your oven very well then reduce it to medium and bake cookies for 8-10 minutes at the most.

Leave to cool then store in a well closed jar.

 

Cardamom Cookies:

Ingredients and method:
*2 cups flour.

* 1/2 tsp baking powder.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together.

* add butter and mix with your hands till you have a from dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture.

* press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.

Date Rolls.

Hello everybody.

It’s been such a long time since I did these, maybe in Eid Al-Adha meaning seven months now.

  Date Rolls are such a favorable kind of cookies, they have a nice aroma, taste and texture that everyone love, made a small batch for my dear sis to take with her back home next week and hopefully I’ll have time to make her some rock cookies also.

Edited Cardamom Cookies.

Hello everybody.
My mother in-law’s lovely old friends were gathered today upstairs,such a lively group of ladies chatting and laughing at old stories and memories.

We ordered some pastries, made spinach tabouleh and got out some Rock Cookies from the freezer,my sister in law made chocolate cake.
Remember the cardamom cookies in made long time ago?  Well did some today but added 1/2 tsp baking powder this time and it did make a difference, I’ll write down the recipe again better.

 

Ingredients and method:
*2 cups flour.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt

*1/2 tsp baking powder.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together. * add butter and mix with your hands till you have a frim dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture. * press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes. Till bottom slightly golden then toast surface for 5 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.

Dry Fruits Cookies.

Hello everybody.

Was privileged by a visit from my dear uncles this morning,e had coffee and Coconut Jam cake, a favorite of my best uncle Ziad, I was really happy he ate from it cause I know how much he loves coconut.

Started cooking lunch after they left which was upon kids request ” Shakshouka” and some baked beets. Did them a different way than usual, wrapped in foil then baked till tender , yummy and easy.

My son invited some of his friends over so I baked some mixed dried fruits cookies and prepared a chocolate chip giant skillet cookie to bake when they arrive. I actually prepared a basic batter then divided it to two portions one with fruits and one with chocolate.

Basic cookie dough is:

*1 egg.

* 3/4 cup butter.

* 1/2 to 3/4 cup brown sugar.

* 1 tsp vanilla.

*1/2 tsp bicarbonate.

* 1 tsp baking powder.

* 1/2 cup oats ( optional)

* 1 1/2 cups flour.

* pinch of salt.

* beat butter and sugar till creamy then add egg and rest of ingredients then you can add any kind of nuts,dried fruits,dark or white chocolate or marshmallows.

* spoon a walnut size amount of dough and place in a big oven pan.

* bake in a medium heated oven for 10-13 min max.

* I decorated today’s cookies with some melted chocolate.

Cookie Gifts :)

Hello everybody.

I have this childish habit I guess ! love to use,eat.wear any gift right away .I never hide away or keep anything for later like today, I got this beautiful food display tray from my cousin yesterday,really elegant, so I called my friends this morning for coffee then thought why not make a quick breakfast to use the new item ? loveliest meal ever specially when shared with my best friends.

Afternoon I baked some Rock cookies and Chocolate Chip Marsh mellow ones for my cousin loving in U.A.E ,will send them with my friend going to visit her tomorrow, even improvised a greeting and packaging quickly, hope she likes them .

No cooking today of course,lots of leftovers from yesterday.
