Hello everybody.

It’s been a long time, missed writing new recipes a lot cause ever since I started catering I haven’t got enough time to try something new , till today 🙂

21463252_10155474240040907_9053016095755751380_n

Lucky me no cooking this morning so I found it an opportunity to use the lonely ripe 3 bananas in the fruit basket into something instead of becoming too soft and then throw them away.

21751525_10155474240370907_3618623170231714890_n

Pistachio Cranberry Cookies.

wp-1466707138166.jpg

Hello everybody.

As I was watching my aunt making pistachio Eid cookies I thought why not make something similar with less effort and mess so came back home and kept searching for a recipe that have same ingredients and taste but in a different way.

Most ones I found were from the Persian cuisine, mainly containing rose water and saffron,so I decided to make a combination of many in one.

20160622_185954.jpg 20160622_183805.jpg

Result was a big success, soft aromatic with nutty flavor cookies, I used tweezers to make them similar to the usual ka3ek we make.

20160622_185840.jpg wp-1466707133693.jpg

Ingredients and method :
*3/4 cup butter.
* 3/4 cup sugar.
* 1 cup crushed pistachio.
* 1/2 cup crushed almonds.
* 1/2 cup dried cranberries.
* 1 egg.
*1 tsp vanilla.
* 1/4 cup rose water.
* 1 tsp saffron (optional)
*1 tsp baking powder.
*pinch of salt.
* 2 1/2 cups flour.

20160622_184136.jpg

*Beat butter and sugar till creamy.
* add egg and vanilla.
* add pistachios,almonds, cranberries.
* add flour, salt and baking powder.
* add saffron and rose water.
*knead well till you have a soft dough.
*refrigerate for half an hour.
*form into balls and decorate the shape you like or you can use usual cookie molds.
*bake in a medium heated oven for 10-13 minutes.

Mini Sale !

wp-1459705362868.jpg

Hello everybody.

An idea clicked my mind last night why not make a small market at my house as a trial, this came up after visiting a local farmer’s market yesterday. Well I do make or already have many products so why not sell them the same way but through social media instead of going to a market.

wp-1459705420028.jpg

So my kitchen started buzzing early this morning, baked some za’tar puffs, date rolls, jams and marmalade, walnut cookies and a full basket of farm eggs .

wp-1459705430900.jpg wp-1459705367050.jpg

After I posted the products on Facebook all was gone in an hour specially the eggs, already have orders for the next batch , guess my mini market will be a fixed event !

Persian Walnut Cookies.

wp-1459442939979.jpg

Hello everybody.

As always I like to try a new recipe,it’s becoming like a weekly challenge for me. Today’s trial was an interesting cookie one from the Persian cuisine.

Ingredients can give you a hint that it’s delicious, all nutty and aromatic but next time I’ll make them a bit smaller cause they spread well when baked.

Ingredients and method:

wp-1459442978819.jpg wp-1459442970682.jpg

* 1 1/2 cups crushed walnuts.
* 3/4 cup sugar.
* 3 egg yolks.
*  1 tablespoon rose water.
* 1 tsp cardamom.
*  1 tsp vanilla.
* 1 tsp baking powder.
* pinch of salt.
* 1 extra egg yolk plus one tablespoon water.
* extra whole walnuts for garnish.

wp-1459442989947.jpg

* Beat eggs, vanilla, cardamom, sugar well.
* add walnuts,rose water, baking powder and salt.
* dough will be sticky so use two spoons to scoop small amount on baking tray layered with wax paper.
* put a walnut on each cookie then brush with egg water mixture ( I think I’ll skip this next time maybe)
* bake in a medium heated oven (180 c) for 15-20 minutes only or till edges are brownish.

wp-1459443002973.jpg

Note: cookies will be soft when hot but don’t worry they’ll harden later on.

Store in a closed jar later, they great with coffee or tea,rich in flavor and extremely delicious.
