Fresh Sauteed Asparagus.

Hello everybody.
Hope you’re all enjoying your weekend.

We went for a drive noon then ended up stopping by our dear friend Salam’s farm for coffee.

This farm or actually house is located in the beautiful picturesque village Rmeimeen, you can’t imagine how quiet and relaxing this place is, specially now, green hills and valleys, just perfect.
Our friend cultivates many vegetables and fruits, we always go home loaded with whatever is in season.Today he gave me a big bunch of fresh asparagus.

  Back home to make lunch, took out burgers,made some caramelized onions with mushroom sauce as a twist, lovely with pickles on top.
Also made simple salad but added croutons, summaq and some hard labaneh balls dipped in sesame seeds, ate that at a restaurant the other day, they even gave it a fancy name “Jarash Salad”.
  As for the asparagus I simply sauteed them in butter, olive oil and garlic then sprinkled lemon juice on top when tender. DELICIOUS !

Great lunch, we were even lucky weather is warm and ate outdoors♡♥

Strawberry Syrup.

Morning everybody.

Beautiful Spring day,spend the morning working in the garden, when done, cooking started. First I had some extra strawberries, I sliced them and added sugar on them till I finish cooking.
This syrup is very easy to make,  you can keep it in the fridge to use on cakes or ice cream, better than artificial ones in the market.

Ingredients and method:
* 1 cup sliced strawberries.
* 1 cup sugar.
* 1 tsp lemon juice.
* add sugar on strawberries and leave till all syrup is out.
* simmer on low heat till strawberries are tender.
* mix with hand blender then add lemon juice .
* simmer on very low hest for 5-10 minutes.
* serve with basic cake or ice cream.

Coconut Caramel Cake.

Hello everybody.
 
     Nobody’s coming to lunch today,as for me a cheese sandwiche is more than enough :).
  But nevertheless I did a cake for my mother in-law cause her cousins are coming for coffee.
I actually paused before choosing a title for this cake. In my cook book it’s entitled  Farrah’s Cake after the name of my friend’s sister in-law whom I got the recipe from. I guess coconut caramel describes it well also.
Note: this cake doesn’t contain flour in it, can be done to people on gluten free diet.

Ingredients and method:
* 5 eggs.
* 1/2 cup sugar.
* 3/4 cup vegetable oil.
* 1 cup powdered milk.
* 1/2 cup coconut.
* 1 spoon instant coffee.
* 1 tsp vanilla.
* 1 tsp baking powder.

* beat eggs, sugar, vanilla, oil and coffee.
* roast milk powder in a pan on low heat till golden.
* add them with baking powder to egg mixture.
* bake in a medium heated oven for 30-40 minutes .
Note: be careful when baking this cake.it’s very delicate and may fall down if you open the oven..
* decorate with caramel sauce or castor sugar.

Friday Breakfast.

Morning everybody

Lovely Friday, we’re all invited to to my sister in-law’s for a big brunch rather than a breakfast. Her husband made his famous omelet with veggies plus of course many dishes like sunny side ups, hummus, fatteh, falafel, labaneh,  cheese….etc.

I kept them waiting till I come to take photos of omelet making steps.
Ingredients and method:
* eggs.
* 1 small finely crushed clove of garlic.
* finely chopped hot pepper, sweet pepper, tomatoes, small onion, green onions.
* salt and pepper.

* heat some oil ,vegetable or olive,  add onions till tender.
* scramble eggs add garlic salt ,pepper. Mix well.
* add other veggies
* when onions are almost done add egg mixture then stir till all egg is dry but be careful if it over dries it won’t taste good at all.
* you can add double cream or cheese if you like also (optional).

California Coffee Cake.

Hello everybody.
It’s been a while since I backed a cake..2-3 weeks, I searched in my cook book for something light and a bit different than I usually make.
Found this recipe, think I copied it from a magazine long time ago. Goes along great with a cup of tea or coffee.

Ingredients:
* 2 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup butter.
* 1/2 cup milk.
* 2 tsp baking powder.
* a bit of lemon zest.
* 1 1/2 cup flour.
Filling:
* 1/2 cup brown sugar.
*1 tablespoon butter.
* 1 tablespoon flour.
* 1 tsp cinnamon.
* 1/2 cup crushed walnuts ( optional).

Method:
* mix filling ingredients together very well.
* mix cake ingredients alternatively in order.
* grease or place wax paper in a cake pan, round or rectangular as you like.
* pour half of cake batter then sprinkle filling to cover then add remaining batter.
* bake in a medium heated oven for 30-35 minutes or till toothpick inserted is dry.
* cool completely then remove from pan.
* serve with tea or coffee.

Anise Cake (كعكه اليانسون )

Morning everybody.
   Woke up early today,a day can be very long and one can do many things when starting early that’s for sure.
  So cause I have lots of time before cooking lunch I made anise cake. Very easy and healthy as breakfast with coffee if anyone is in a hurry to go out. It resembles the anise sticks you buy from bakeries but of course doesn’t compete with homemade baked ones.

Ingredients:

* 4 eggs.
* 1 cup sugar.
* 1/2 cup olive oil.
* 1/2 cup vegetable oil.
* 2 big spoons anise powder.
* 2 big spoons anise seeds.
* sesame seeds
* 2 tsp baking powder.
* 1 tsp vanilla.
* 2 cups flour.

Method:
* mix eggs, vanilla, sugar with electric mixer till fluffy. Add rest of ingredients.
* sprinkle bottom of pan with sesame seeds, add the cake mixture and bake in medium oven for 30 minutes or dry in center.
* when cooled cut to slices and roast again till golden from both sides.( مثل شكل القرشله)
* leave to cool completely then keep in well closed jar or tin.

Pasta dish for this week: lasagna

I noticed that all family members enjoy pasta of every kind and flavor…I myself , cooks a kind of pasta every week or 10 days.
Today I made lasagna…simple basic recipe..with white sauce..and minced meat with tomato sauce,,, I added some vegetables to the meat sauce..peas, carrots, sweet corn…this is optional of course.

A tip my best friend Sireen once told me is to add one tablespoon of flour to the tomato sauce mixture so as to thicken it.
I also added dried oregano and a big spoon pesto sauce……so yummyyyy.
I also made a basic salad  with fresh green onions and mint leaves.
