Chocolate Hazelnut Caramel Thumbprints.

Hello everybody.

Testing new cookies for Christmas orders, came across this recipe the other day and thought it’ll be a good choice and i was right.

Elegant crispy from the outside cookies , so easy to make and you can always make many variations of them. I mean you can envelope them with either hazelnuts or almonds and fill them with caramel or Nutella , all really tasty for sure.

Ingredients and method:

* 3/4 cup butter.

* 1/2 cup sugar.

* 1 large egg separated.

* 1/2  cup flour.

* pinch of salt

*1/2 cup cocoa.

*2 tablespoons cold water.

* 3/4 roasted finely crushed nuts.(hazelnuts or almonds)

* caramel or Nutella

* beat egg yolk,butter,sugar and salt till creamy.

* add flour and cocoa  knead till you form a ball.

* form small balls then press them  with your thumb a bit in the middle.

* beat the egg white and coat cookies with them.

* roast and crush finely the nuts then coat cookies with them as well.

* bake in a moderate heated oven for 13-15 minutes.

* when cooled add a little bit of caramel  in the thumbprint.

I also made super easy coconut Maltesers balls but this time I roasted the powdered milk till golden , added a caramel taste to them .

Ingredients and method:

*2 cups dry milk powder.

* 2 cups coconut.

* 1/2 cup icing sugar.

* 1 pack cream.

* 1 tablespoon butter.

* 3 packs Maltesers.

* Note: I added some orange zest,goes well with it.

* Mix all ingredients together till they’re like a paste then cover each Maltesers ball with it and roll into a ball .

* cover with coconut and leave to cool in the fridge.

To fill the box for today”s order I added some rock cookies and lemon crinkles I made yesterday, turned out a beautiful colorful Christmas gift.

Coconut Custard Dessert.

Hello everybody.

Yesterday I prepared a new recipe,cold kind of dessert that’s better done a day before,love these recipes cause they’re a big rescue when you’re busy or have guests.

My aunt did this one last month so thought it’ll be nice with today’s order to my uncle’s,a treat cause they’re busy moving to a new house.

Ingredients and method:

* 4 cups water.
* 15 tablespoons powdered milk.
* 1 cup sugar.
* 2 tablespoons custard powder.
* 2 tablespoons cornflour.
* 1 cup coconut.
* 1 tsp vanilla.

* mix all ingredients well till custard and starch dissolve
* keep stirring and heat till mixture boils and thickens.
* pour into any desired mold or pan.
* refrigerate for 2-3 hours or preferably overnight.
* remove into a plate and decorate with strawberries or chocolate.

Great Depression Cake ( No Egg No Milk)

Hello everybody.

Yesterday I met a sweet lady who asked me if I make no egg and milk cake cause as you know it’s fasting time now and she had trouble finding one for her mom on Mother’s day.

Her question intrigued me to look for such recipe which led me to many.Most famous ones are called “big depression” or ” crazy cake” or “wacky cake”. Reason for this name goes back to the great depression time when eggs and dairy products were available so people had to use other resources to make cake. Result was really good and light, I changed a bit in the recipe to add up the flavor and topped it with pineapples and roasted coconuts.

Ingredients and method:

*3 1/2 cups flour.

*2 cups sugar ( I used only 1)

* 1/4 tsp salt.

*2 tsp baking powder.

*1/2 cup coconut.

*1 tsp lemon zest.

*1 tsp vanilla.

*2 tsp white vinegar.

*5 tablespoons vegetable oil.

*2 cups water.

* Some pineapples with it’s juice and roasted coconuts for garnish (optional)

*grease a big oven pan with some oil.

*mix all dry ingredients very well then put them in the pan.

*make 3 depressions in the flour mixture, two small and one bigger.

*put the vanilla in the fist small hole, vinegar in the other and finally oil in the big one.

*add water on top of  and mix all together well.

* Bake in a medium heated oven for 25-30 minutes or till try to toothpick test.

*when cooled add some pineapple juice on top and garnish with pineapples and coconut.

Italian Cream Cake.

Hello everybody.

Tomorrow we’re celebrating the birthday of two precious people, Mom and my cute bundle of joy, my nephew who turned one Tuesday.

I’ll make many things for the party among them is this amazing cake, been waiting for a special occasion to make it, so guess it’s the best time right?

Found many recipes on Pinterest and came out with this at the end.

Ingredients and method :
Cake :

# 5 large eggs.
# 1 1/4 cups suger.
# 1/4 cup light brown sugar.
# 1 stick butter.
# 1 tsp vanilla.
# 1 cup buttermilk ( 1 cup milk with a tsp of lemon juice in case you don’t have buttermilk)
# 1/2 tsp baking soda.
# 3 tsp baking powder.
# 2 cups flour.
# 1/2 cup roasted coconut.
# 1/2 cup roasted pecans.

Frosting :
# 1 pack cream cheese or 12 pieces Kiri.
# 1/2 cup butter.
# 1 pack cream.
# 2 envelopes dream whip.
# 1 tsp vanilla. #half cup of roasted coconuts and pecan.

# Beat sugar and butter till smooth and creamy then add eggs one at a time.

# add vanilla, buttermilk,baking soda, baking powder and flour consequently with the flour.

#add coconut and pecans and mix with a wooden spoon.

# pour batter in three greased small pans.
# bake in a medium heated oven for 25-30 minutes.

#Beat all frosting ingredients well till creamy then add coconut and pecan.

Lime Coconut Crinkles.

Hello everybody.

Another batch of chocolate crinkles today  for a friend of mine, crossed my mind last night to try other kinds, a chance to let people try them and give me feedback for future plans.

Found many recipes in various sites but this one plus the molasses ginger ones caught my attention, lime coconut crinkles are so lemony and full of flavor much better than lemon ones I did before, those were good but guess needed more flour , a stupid mistake  then !

Ingredients and method of lime coconut crinkles:

  • 6 tablespoons butter.
  • zest and juice of 1 lime .
  • 1/2 cup sugar.
  • 3 tablespoons coconut flakes.
  • 1 egg
  • 1 tsp vanilla
  • 2 tsp baking powder,
  • 2 cups flour.
  • caster sugar for coating.

  • Beat sugar,zest of lime and butter well till creamy.
  • add egg,vanilla,lime juice,coconut flakes.
  • add flour and baking powder.
  • cool in the fridge for 2 hours.
  • form into small balls then coat with caster sugar.
  • line up cookies on wax paper then flatten them a bit with your fingers.
  • bake in a medium heated oven (180 C) for 10-13 minutes only.
  • leave to cool then keep them in a closed jar so as not to dry.

Greek Semolina Cake.

Hello again.

A usual companion to cabbages and cold weather is this semolina cake or harisseh.

Frankly the usual harisseh that most people do never turn out successful,don’t ask me why 😀,not my specialty I guess. So to ensure that it’s good I make this Greek one, very similar but contains eggs so it’s more like a cake but same taste and texture.

Here are the ingredients and method :

*4 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup coconut (optional).
* 1/2 yoghurt.
* 3/4 cup butter.
* 2 1/2 cups coarse or fine semolina.
* 2 tsp baking powder.
* 1/4 tsp sodium bicarbonate.
For the sugar syrup :
* 3 cups sugar.
* 1 1/2 cups water.
* 1 small spoon lemon juice.

*Mix all ingredients alternatively. Grease a
medium size pan with butter or tahini (طحينه ).add the batter
*Sprinkle with almonds then bake in a medium heated oven till golden.
* As for the syrup mix sugar and water, heat till it boils, add lemon juice and leave to simmer till it thickens .approximately 20-30 min.leave to cool.
* Add cold syrup on cake when still hot so as to be well absorbed .

Orange Coconut Cookies.

Hello everybody.

Had a small gathering this morning, didn’t have too much time but managed thank God.

A cheese platter with dried fruits, some veggies and za’tar puffs is always an elegant easy thing to do, so that was the salty part.

As for the sweets I made a dry fruits cake last night and since I’m baking the puffs thought I’d do these old times favorite cookies.

These were a big hit back when we were kids, mom used to make them all the time,along with the pineapple upside down cake and jello with apples, life was very simple and basic back then right?

Ingredients and method :

* 2 eggs.
* 1 tsp vanilla.
* 2 tablespoons butter.
*1 cup sugar.
*zest and juice of one big orange.
*3 cups coconut flakes.
* 2 teaspoons baking powder.
* 2 cups flour.

*beat sugar and butter till smooth and creamy.
* add eggs,vanilla, zest and juice.
* add coconut, flour and baking powder.
* dough must be neither soft nor tough so you can easily scoop it with two small spoons.
* line your cookies on a cookie sheet then bake them in a moderately heated oven for 10-13 minutes.
Note: be careful not to over bake them or else they’ll be dry.
*cool and store in a well sealed jar.

Another Samoa Cake.

Hello everybody.

It seems Winter is officially here, woke up to heavy rain and fog,strange in this time of year.

I was invited to a gathering with the loveliest ladies this morning and   various kinds of food was spread, salads snacks and appetizers alongside lasagna and potato pie.

I made a Samoa cake cause we had two birthdays to celebrate.

Samoa Bundt Cake ( caramel Coconut)

Hello everybody.

Visited a dear friend this morning who had a big gathering and I did promise her to bring her something sweet so my search came across this elegant sort of easy cake that I decided to make right away.I love coconuts and caramel so guess combined will be awesome.

 

Don’t know from where this cake got its name,tried to look for the origin but didn’t find a clue.This cake is like a marble cake but with caramel and chocolate instead of vanilla.

Ingredients and method:

  • For the caramel batter:
  • 3/4 cup butter.
  • 1 cup dark brown sugar.
  • 2 eggs.
  • 1 cup flour.
  • 1 tsp baking powder.
  • 1/8 tsp baking soda.
  • 1/4 tsp salt.
  • 1/2 cup milk.
  • Beat all ingredients consequently and keep aside,

 

  • For the chocolate batter:
  • 1 cup sugar.
  • 1/4 cup oil.
  • 1 egg.
  • 1 tsp vanilla.
  • 1/2 cup milk.
  • 3/4 cup cocoa.
  • 1 tsp baking powder.
  • 1 cup flour.
  • 1/2 cup boiling water.

Beat all ingredients consequently till smooth.

In a bundt greased cake pan pour a small amount of chocolate batter then a small amount of the caramel and continue till all done.

Bake in a moderate heated oven for 40-45 minutes or till done.

cool then decorate with the following:

  • 1 can sweetened condensed milk.
  • 1 tablespoon butter.
  • 1 tsp vanilla.
  • 1 pack cream.
  • 1/2 cup toasted coconuts.

In a pressure cooker cook the closed can of milk for 30 minutes ,cool and open carefully then mix with other ingredients.

decorate cake with this frosting then sprinkle roasted coconuts and chocolate on top.

Note: you can cook the milk in a regular pan but it’ll take more time of course.
