Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Artichoke Cherry Tomato Chicken.

Hello everybody.

Another new chicken recipe today since I have lots of cherry tomatoes so this one is the choice.

Chicken breasts seasoned with salt, pepper, herbs then sautéed in some olive oil.When almost done add the tomatoes and artichokes.

Leave all to simmer for 20 minutes then sprinkle with parmesan cheese and roast a bit in the oven.

Healthy light and easy.

Summery Watermelon Salad.

Hello everybody.

Back to normal life routine today, went grocery shopping and kitchen started buzzing after a three day vacation.

Since it’s extremely hot and nobody wants to eat something hot or heavy after eating in restaurants past couple of days one feels so full right?
Well end result for lunch was this amazingly cool salad which consists of watermelon cubes, cherry tomatoes, feta cheese and sprinkled with green onions, mints and lemon slices, I then added a drizzle of pomegranate sauce and olive oil. Really yummy.

I also made some pasta with white cheese and parsley and tacos. All very delicious.

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Basil Cherry Tomatoes Mazorella Steaks.

Hello everybody.

Last minute decision of what to cook for lunch came out after lots of ideas and guesses, typical Friday.

Well finally I took out some steaks since I have all ingredients of the dish, Rita’s recipe, simple sautéed thin steaks topped with fresh basil, cherry tomatoes and a slice of mazorella. Extremely delicious, all gone in minutes.
I made mashed potatoes, sweet creamy corn, gravy with mushrooms and a bowl of Ceazar salad.

Greek Style Quesadillas.

Hello everybody.

Very hot and busy morning , don’t know why streets and shops are full, finished grocery shopping as fast as I can to go back home :(

Lunch today was noodles with vegetables and chicken,with soy sauce,ketchup and ginger. It’s a favorite of ours all the time .

I also made a quick side dish, light vegetarian quesadillas,found this recipe on Pinterest. You can add chicken to it if you like, your choice. Tasted really really good,will certainly do them again !

Ingredients and method:

* large tortilla bread.

* feta cheese.

* mozzarella cheese.

* fresh parsley and mint , chopped.

* black olives.

* chopped sweet peppers.

* pesto sauce or fresh basil leaves.

* cherry tomatoes.

* oregano,salt and pepper.

* optional additives : onions or shredded chicken.

* add feta and mozzarella on half of the bread then add toppings as you like.

* grill or toast in the oven after brushing pan with a bit of oil.

That’s it, enjoy !!!

Broad Green Beans Salad.

Hello everybody.

Grocery day again,ended up buying lots of fruits and vegetables,so fresh and tempting,couldn’t resist the red cherries and seedless grapes, don’t you just love Summer with all its colors and varieties?

I  got some broad green beans and cherry tomatoes to make this salad that my cousin who lives in Rome posted in my Facebook group, turned out absolutely delicious,even kids loved it :)

As for lunch it was fresh mloukhieh with chicken,really good as always,dessert was a big bowl of fruits !!

Ingredients and method:

* broad green beans cut and boiled in salted water till a tender but not overcooked.

* cherry tomato.

* lemon zest.

* sauteed garlic cloves.

* salt,pepper,lemon juice,pomegranate sauce or balsamic vinegar and olive oil.

* just mix all ingredients and toss with dressing .

very easy healthy dish.
