Lovely Meatballs In Buns.

Hello everybody.

Tried this new recipe I’ve seen in So Yummy page.

You simply empty top of buns, sprinkle with garlic, parsely olive oil or butter then some cheese.

 

Add sautéed meatballs, a bit of marinara sauce then another layer of cheese.

Put all in the oven for 15-20 minutes and that’s it.
Easy, delicious and presentable.

Morning Gathering.

Hello everybody.

A simple elegant cheese platter with dried fruits and strawberries with crackers or breads can be the best thing for a small gathering specially if done with love to loving friends.

I used a selection of cheeses, white, cheddar, Camembert and kashkaval with healthy dried fruits, some olives and a selection of jams (figs,quince, marmalade)

Meatloaf With A Twist.

Hello everybody.

Didn’t realize that it’s been this long since my last post!!!

Busy Banan Cooking kitchen for sure, no time for new recipes at all but today I tried this old new one for a change.

I’ve been watching this new TV show accidentally, well it’s on the hunting channel my husband watch everyday that’s why 🙂

This chef is really amazing, cooks in the wilderness many easy delicious dishes,salads and appetizers.

Last night he made this meatloaf, same as the one I usually make with one additional ingredient which is mushroom.You simply sauté onions, garlic and mushroom then add them to meat, egg, breadcrumbs mixture.

Ingredients and method:
* 1 kg minced veal.
* 1 egg.
* 1 spoon ketchup.
* 1/2 cup breadcrumbs.
* 1 spring onion.
* 1 bunch parsley or spinach.
* 1 tsp soy sauce.
* salt, pepper, oregano, all spice.
* 3-4 slices cheddar cheese.
* extra ketchup for surface.

* chop onion and parsley saute in a bit of oil.
* add to meat with rest of ingredients and knead well till mixed.
* spread on wax paper into a rectangle.
* add cheese slices and fold.
* spread olive oil and ketchup on surface.
* bake in medium heated oven for 30-40 minutes.
* serve with fries or wedges.

Made some roasted potatoes with rosemary and oregano on the side plus marinated roasted red peppers.

Successful Catering Job.

Today I was honored to cater a workshop at the Ministry of Water and Irrigation for a group of Dutch experts.

I can proudly say it was a job well done, everything was perfect and work went on smoothly.

I did assorted cookies and snacks for the coffee break then followed by burgers, shawerma and falafel for lunch.

Along with zatar and cheese puffs all with veggies and olives.

Grand finale was a beautiful lemony cake topped with berries and ganache.

Cheese Zatar Rolls.

Hello everybody.

Thanks to a member in Banan Cooking group that made realize that  i didn’t post recipe of these yummy rolls that are now a basic item in my menu. So light and perfect for a snack or even breakfast.

Sorry for my laziness again in posting new recipes, it’s been really the craziest summer ever , hope life will go back to it’s normal routine soon.

 

Ingredients and method:

* 3 cups flour.

* 1 tsp salt.

* 1 cup yogurt.

* 2 teaspoons instant yeast dissolved in a cup of warm water and 1 tsp sugar.

* 1 tablespoon butter.

* 1 egg.

* a drizzle of olive oil to coat dough .

Stuffing:

  • grated white cheese.
  • 2 tablespoons feta cheese.
  • zatar.

*Mix flour with salt , yogurt and butter.

*When yeast foams add it with the water to flour and knead well for 5 minutes.

*Dough will be very soft, leave to rise then roll it to a big rectangle on a flour dusted surface.

*Add stuffing and roll it,

*Cut to pieces then flip it on the side and shape then into circles on n oven pan

* Bake them in a well heated oven till bottom is golden.

*Roast surface as well, you can drizzle olive oil on top at this step .

Cheese Stuffed Burgers.

Hello everybody, hope you’re all enjoying the amazing weather.

Well today I can assure you that everything happens for a reason, I absolutely had no idea what to cook this morning then by coincidence I found out that my freezer was off since a while from the loosened wire so I had to cook melted stuff. End result were fava beans and steaks in yogurt, two pieces of scallop and two burgers.

My son decided to stuff burgers with cheese so I coated it with eggs, flour and breadcrumbs then deep fried the ball.

Result was variety of yummy stuff at the end

Weekend Events

Hello everybody.

Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.

Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.

This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.

Smoked Salmon Bagels.

Hello everybody.

Thought I’d do some fresh bagels today,still have a pack of smoked salmon so a well combined rich bagel would be a lovely lunch for sure.

Did the same recipe as before, though today dough was so sticky so I added some more flour for easier handling.

Filled some with salmon, avocado, cream cheese, dill and capers and others with cheese,tomatoes and rocca.

Steak Sandwich Loaf.

Hello everybody.

Had to make a lunch quickly cause boys had dentist appointment and may not be allowed to eat for hours afterwards.

I was about to make shawerma with some spinach in pitta bread I made this morning for mom’s gathering but boys suggested that I’ll try to make the Fajita Loaf style but as steak sandwich,result was really delicious they even loved it more than chicken.

Filling was sauteed shredded beef and onions with steak spices and chili then when done I added some Gouda and cream cheese. Of course you can add sweet peppers and mushrooms.
