Started to think about what to cook today after morning order was done and delivered.
Well to tell you the truth I had to improvise anything according to what I have, so end result was cauliflower stew with minced meat, garlic, onions and tahini sauce on the side plus a small kibbeh for the boys.
Got these two lovely colored cauliflowers yesterday from our friend.When I asked my Facebook group what to do with them I got many suggestions, main one was to pickle them and another was roasting with garlic, olive oil and Parmesan or as gratin with potatoes.
So now I pickled half and prepared a pan with potatoes and cream for baking. All looks appealing and colorful.
Woke up to a rainy cold day, I really don’t like this weather specially if I have to go out, anyway a breakfast gathering was already fixed from last week at a coffee shop ” Commodo “, to be honest food was good but service was awful, hate it when food comes before tea and hot plates before cold, anyway I don’t think I’ll be going again
Lunch today was cauliflower with rice and salad suitable dish in this weather.Dessert was recycled chocolate cake leftovers crumbled with its sauce then I made simple custard and topped crumbles with it, nice dessert with coffee after the afternoon nap.
Usually when I cook meat either cubes or minced I keep some of it in the freezer so that when a day like today where you leave the house early to do some errands and go later coffee-ing somewhere you come home to cook lunch, half of cooking steps will be done.
Last night boys said they wanted cauliflower for lunch,so I took out the cooked meat before I went out,bought some fresh cauliflower on my way back and lunch was ready just on time.:)
Saw this recipe on my Facebook friend Mary’s timeline thought I’ll try it today,got a tiny cauliflower to do the test,well it turned out really good, light appetizer with a spicy sour taste,though as usual reality is never like the photo posted,Photoshop is so mean sometimes!
You simply marinate a whole cauliflower is yogurt,olive oi,lemon zest and juice ( forgot them in the photo) ,salt,pepper,chili powder and cumin. Then you place it in a deep pan and bake it in a well heated oven till brown and crisp from the outside,serve with green salad or as appetizer.
Hello everybody. Lasagna fiesta today, remember the eggplant lasagna I cooked a month ago? I made a small one today and a regular one.
I also made some cooked cauliflower with minced meat, I know this is too much but I’m planning not to cook tomorrow cause my besties are coming to visit me at night ! I’m so excited ♡
Today I cooked a repeated dish ,eggplant with rice (maqloubeh),I think made it with cauliflower,it’s the same but with eggplants instead.
Last week I bought these lovely mini cucumbers,great for making pickles,many housewives now starts to make them for Ramadan,they’re very tasty though people with high blood pressure must avoid them,but I usaully make them not too salty. I might even need to make another batch cause I’m sure they’ll be gone soon as Ramadan comes.
Ingredients and method:
* cucumbers (or any other vegetables you like e.g. cauliflower,beets,green tomatoes,small eggplants…etc)
* chili powder or flakes.
* In an clean empty juice or water bottle or glass jar insert cucumbers.
* make a salt water mixture, 1 big tablespoons for 1 cup of water,I usually make 4 cups of water for this bottle.
* fill water solution in bottle then add 2 cloves garlic and chili (optional)
* add 1 small spoon vinegar and 1 small spoon sugar.
* close well and shake.
* pickles will need one week to 10 days to be ready, you can leave it stored or open bottle ( be careful cause it’ll be very fizzy) then store it in the fridge.
Kids asked for cauliflower with rice ( مقلوبه زهره ), personally I don’t like cauliflower or let’s say it’s not a favorite of mine, I like it more as a stew. Though it’s a very healthy vegetable full of vitamins and minerals, I only eat it for this reason
This dish is very easy and can be served with rice or bread with tahini sauce on the side.
Ingredients and method:
* cooked minced meat or cubed veal or lamp as desired.
* boiled and fried cauliflower.
* 2-3 cloves garlic.
* one small onion finely chopped.
* lemon juice.
* salt,pepper,all spice, cumin and dry coriander.
* saute meat till dry then add garlic and onions.
* add cauliflower and seasoning,leave to simmer, you may add a bit of water if it’s too dry.
