Teramisu.

Hello everybody.
Have a gathering this evening for my sister in-law’s family so I prepared several things one of them is teramisu since I have some mascarpon cheese fresh from Italy that I’d rather use before it’s spoiled.

Cause I don’t prefer using raw eggs though the original recipe requires it, I substituted it with a pack of cream caramel powder, gave it the same color and texture and result was super.

You can find many recipes for it,here’s one option that is very tasty

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream,condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top.

Or the one I made today:

* 200 gm Mascarpon cheese.

* 6 pieces Kiri.

* 1 sachet whipping cream ( Dream Whip).

* 1 pack of cream caramel powder.

* 1 1/2 pack lady fingers biscuits.

* strong espresso or Nescafe.

* beat cheeses and cream very well till smooth then layer biscuits topped with coffee then cream in a pyrex or any mold you like.

* cool in fridge for 3-4 hours or overnight.

I also did Muhalabieh with caramel  and sliced some fruits.

Appetizers will be spinach tabouleh, falafel rolls and Suborek ( turkish cheese pastries)

Muhalabieh with Caramel.

Hello everybody.

 

Had this recipe in my book since Ramadan,a friend of mine made it and I took it right away in order to make it then but I didn’t have any chance,so today when the milkman came it crossed my mind and I bought some fresh milk and did it at last.

 

Very easy cooling recipe and the caramel adds a lot to the taste for sure.

 

Ingredients and method:

Note :this quantity yields 12 small jars or pots.

* 6 cups milk.

* 6 big tablespoons starch.

* 1 tsp mistaka finely crushed with 1/4 cup sugar so as not to stick to the grinder.

* 1 tsp rose water (optional)

* more sugar also optional cause the caramel sauce is sweet.

* leave one or two cups of milk aside and mix starch in them very well.

* add to other quantity,mix all very well then boil till it thickens.

* add mistaka and sugar and the rose water.

* pour in one big bowl or small glass bowls or jars.

* cool in the fridge for at 2-3 hours .

 

Caramel:

* 1/2 cup sugar melted till caramelized and golden.

* 1/2 cup water added very carefully to the browned sugar.

* stir very well and leave to simmer a bit till it’s thick.

* Before serving flip the muhalabieh in a slightly deep dish then garnish with crushed pistachios and drizzle with the caramel sauce.

Caramel Coffee Nuts Cake.

Hello everybody.

Was invited to a small gathering last night at  my friend’s house and it happened that her birthday plus another friend of mine was a few days ago.

As always I did a cake for the occasion, didn’t know what to do at first,wanted something simple and nice then I came out with this one, cake was basic Nescafe cake,frosting was vanilla whipping cream then I decorated it with caramel and roasted nuts.

Final look was awesome and taste was light and yummy.

Ingredients and method:

* 5 eggs.

* 1 big spoon Nescafe dissolved in 1/2 cup of water.

* 1 tsp vanilla.

* 1  1/2 cups sugar.

* 1 cup vegetable oil.

* 4 tsp baking powder.

* 2 cups flour.

* 1 1/2 cups sugar and 3/4 cup almonds for the croquant.

* whipping cream.

* extra Nescafe in water for the cake when done.

* beat eggs with sugar till creamy then add vanilla,oil,Nescafe,baking powder and flour alternatively.

* bake in a medium heated oven in two small baking tins for 30-35 minutes or till dry from inside.

* when cooled, place one layer in serving plate then add some Nescafe on it.

* cover with cream and croquant then add other layer and repeat.

* decorate cake with anything you have .

*Croquant :

* heat sugar and almonds till it caramelize.

* pour in a well greased pan till cold and stiff.

* crush or use food processor to make fine crumbles. ( it actually resembles glass 🙂 )

* leave in fridge to settle before serving.

Crispy Caramel Bites.

Hello everybody.
Another dessert done yesterday was this super easy recipe I’ve learned from a friend couple of years ago.

You know the typical ready samboosek dough?  Well you only have to cut it lengthwise fold it like a butterfly then stick it with some water. Deep fry then sprinkle with cinnamon and icing sugar.

Served with caramel sauce which is caramelized sugar with some water and heavy cream all whisked well together.

Very easy and delicious dish.

Chicken with Pepsi and Marble Cake.

Hello everybody .

Upon special request from my son’s friend I made chicken with Pepsi for him and a marble cake with caramel frosting as dessert.

 

Ingredients and method:
* 2-3 boneless cubed chicken breasts.
* 1 can or pack mushroom.
* 1 green or dry onion.
* 2 cloves garlic.
* 1/2 small cup ketchup (2-3 spoons).
* 1 small spoon soy sauce.
* 1 small can DIET Pepsi.
* 1 big spoon cornflour.
* salt, pepper for seasoning the chicken.

* saute chicken in a bit of oil and season till almost done.
* add chopped onions and garlic.
* add mushrooms.
* add rest of ingredients: soy sauce, ketchup, diet Pepsi and cornflour. Mix well so as not to clot.
* leave to simmer till done and sauce is thick.
* you might need a bit of water if necessary .
* serve with plain white rice.

Marble cake with caramel frosting.

Upside Down Toffee Date Cake.

Hello everybody.
Another cozy warm breakfast at my cousin’s this morning,  simple elegant table full of yummy food.

Dessert was a new cake, upside-down toffee it caramel date cake, easy and yummy. Resembles a lot the upside down pineapple one but with dates instead and my favorite jello with apples and reminder of our lovely childhood.

Ingredients and method:
# 1/2 cup sugar.
# 1 stick butter (100 g)
# pitted dates ( 2 cups)
# cinnamon and cardamom
Cake batter:
# 3 eggs
# 1 cup sugar.
# 1 cup oil.
# 2 tablespoons yogurt or milk
# 1 1/2 cups flour.
# 1 tsp vanilla.
# 2 tsp baking powder.

# heat sugar in baking pan till it caramelizes then add butter and mix.
# arrange dates and sprinkle the cinnamon and cardamom.

# beat cake batter ingredients alternatively then add over dates.
# bake in a medium heated oven for 30-35 minutes or till done in the middle.

# leave to cool down then flip over and serve.

Banana Caramel Pie.( فطيره الموز والكراميل)

Hello everybody.

Craved something sweet last night or actually I saw this recipe on TV couple of days ago,bought puff pastry Saturday so as to do it when the occasion pops up.

It’s a very easy dessert that you can do anytime you have sudden guests, just keep a pack of puff pastry always ready in your freezer and I guess bananas are always available most of the times.

 

Ingredients and method:

* 1 square pack of puff pastry.

* 1 cup sugar.

* 1/4 cup water.

* 1 tsp butter.

* 5-6 big bananas.

* a sprinkle of cinnamon.

 

* In a deep oven skillet or pan add sugar and water, heat till caramelized and golden.

* add butter then cut bananas to medium sized pieces and arrange over caramel.

* sprinkle with cinnamon.

*roll the pastry to a big circle then cover all over bananas and secure edges.

* bake in a well heated oven till pastry puffs and become golden.

* while still hot turn it upside down quickly.

* serve with vanilla ice cream or whipping cream.

Lunch today was frittata ( عجه) and I made some spinach pastries and rest of dough I baked it in a deep pan and made a loaf.

Walnut Caramel Truffles.

Hello everybody.

It was a pleasure to welcome my old university colleagues this morning for breakfast,though we don’t meet much but it’s always a pleasure to see them, good  memories and lots of laughter 🙂

Food was simple and delicious or is it the company that makes it enjoyable? cheeses,labaneh,cream cheese and jam from yesterday and a selection of croissants filled with salmon and turkey.

Dessert was these chewy walnut caramel truffles I made last night and a dish of fruits , found the recipe on Pinterest but made few changes, taste is just perfect.

Ingredients and method:

* 1 cup crushed walnuts.

* 2 cups crushed plain biscuits.

* 1/4 cup brown sugar.

* 1/4 cup maple syrup.

* 2 tablespoons cream.

* melted chocolate.

* Mix all ingredients together except chocolate then form it into small balls.

* line in wax paper and cool in fridge for 30 minutes.

* dip in melted chocolate and cool again,you can decorate top with walnuts while still hot.

These will be excellent for Christmas by the way,can be done and stored a week ahead.

Mini Banoffee Tarts.

Hello everybody.

Told you yesterday this week is crazy,nonstop events. Hope I can have a calm weekend after all , till now no plans hope it’ll stay like this !

Today my beloved childhood cousins came to visit me,that’s why I’m late writing my daily post, we had such great time as always. I did these mini banoffee tarts,same recipe but I used a small mold for the crust and added caramel and bananas on top and chocolate syrup to decorate.I also made spinach tabouleh and za’tar buns filled with cheese and one big topped with labaneh,plus some Maltesers coconut balls from yesterday.

Lunch today was rice with veggies and meat,really yummy!!

Coconut Caramel Cake.

Hello everybody.
 
     Nobody’s coming to lunch today,as for me a cheese sandwiche is more than enough :).
  But nevertheless I did a cake for my mother in-law cause her cousins are coming for coffee.
I actually paused before choosing a title for this cake. In my cook book it’s entitled  Farrah’s Cake after the name of my friend’s sister in-law whom I got the recipe from. I guess coconut caramel describes it well also.
Note: this cake doesn’t contain flour in it, can be done to people on gluten free diet.

Ingredients and method:
* 5 eggs.
* 1/2 cup sugar.
* 3/4 cup vegetable oil.
* 1 cup powdered milk.
* 1/2 cup coconut.
* 1 spoon instant coffee.
* 1 tsp vanilla.
* 1 tsp baking powder.

* beat eggs, sugar, vanilla, oil and coffee.
* roast milk powder in a pan on low heat till golden.
* add them with baking powder to egg mixture.
* bake in a medium heated oven for 30-40 minutes .
Note: be careful when baking this cake.it’s very delicate and may fall down if you open the oven..
* decorate with caramel sauce or castor sugar.
