Chicken with Lemon Olives Sauce

Hello everybody.

Hot and dusty Saturday,many errands and shopping today,I even started cooking very late!

last night I took out my cookbook to search for something new and easy to do,sometimes you feel you’re bored from all the things you cook and need a change or twist,I found this old recipe that I’ve never tried but as usual I always write down anything  I feel will taste good,you can tell from the ingredients sometimes whether they fit together or not.

Honestly it was a success,I have my dear friend Reham as a witness,you can ask her 🙂

It’s a very simple chicken with lemon sauce and olives and I made some sauteed veggies on the side,really delicious.

 

Ingredients and method:

* boneless pounded chicken breasts.

* bread crumbs and flour seasoned with salt,pepper and oregano.

* lemon slices and lemon juice.

* half cup pitted green olives.

* some butter and olive oil.

* coat chicken with mixed flour and crumbs.

*saute them in olive oil and butter on both sides till almost done.

* remove from pan,then add some more flour and butter ( about 2 tablespoons) in the same pan you sauteed the chicken,add lemon slices and juice (about half of a lemon) and the pitted olives.

*add one cup of hot water and stir well till sauce is creamy and homogeneous.

* before serving add sauce to chicken breasts and simmer for 10-15 minutes

* as for veggies I sliced them,added some olive oil,salt,pepper and left them to simmer till done.

Stuffed Mushrooms.

Hello everybody.

Weekend is here again,final exams next week and then done with school,next year will be last one for my youngest,can’t believe how kids grow so fast 🙂

Today’s lunch is beans with garlic and tomatoes in olive oil (لوبيا بالزيت), similar to the string beans I did once ( فاصوليا بالزيت),but this kind of beans is thinner and has different taste. you simply saute crushed garlic then add cut cleaned beans then chopped tomatoes,season with salt and pepper then leave to simmer for 30-40 minutes or till done.

I also made my friend Rula’s recipe of stuffed mushrooms,wanted to make my cousin Sa’ed’s ones but those needed spinach and bigger mushrooms than the ones I have,next time maybe.

Ingredients and method;

* fresh white mushrooms.

*butter.

*bread crumbs.

* cheddar and Parmesan cheese.

* parsley.

* remove mushroom stems, chop them then add cheeses,crumbs,parsley and a bit of butter and mix all very well.

* grease oven pan with butter,line mushrooms in it then stuff them.

* cover with foil then  bake for 20-30 minutes.

Cinnabon Pancakes

Morning everybody.

Long weekend this week,public holiday this Sunday,Jordan celebrating Independence Day .I’m sure many working moms  are happy now,wish you all a relaxing enjoyable time.

As a change this morning cause all of us have plans at lunch time,I made a rich fulfilling breakfast. saw this recipe on Pinterest ,it’s a combination of pancakes and cinnabons,really tasty but a bit too sweet,first two pieces were really sweet so next batch I lessened amount of cinnabon mix on pancake so  itwas better.

I ended my breakfast with a piece of white cheese to reduce sweetness in my mouth !! other than that it’s really good.

Ingredients and method:

* For pancakes ( you can use ready mix and add on it the cinnabon mix also)

* 1 egg.

* 1 cup flour.

* 1 cup milk.

* 1 tablespoon vegetable oil.

* 1/2 tsp baking powder.

* pinch of salt.

* Cinnabon mixture:

* 2 tablespoons butter.

* 3 tablespoons brown sugar.

* 1 tsp cinnamon.

* For the glaze:

* cream cheese ( I didn’t have it today so you can do without it)

* 1/4 cup icing sugar.

* 2-3 tablespoons milk .

 

* Mix pancake ingredients very well.

*Mix cinnabon ingredients after melting the butter.

* mix glaze ingredients well also.

* pour pancake mix in a  heated non stick pan or skillet ( enough to cover it)

*add a small spoonful of cinnabon mix on top as a swirl.

* lower heat till pancake is dry.

* top with glaze and walnuts.

Chocolate Chip Skillet Cookie <3

Hello everybody.

Went out to lunch with the boys today,to tell you the truth I haven’t eaten junk food since beginning of the blog, I really miss it,though I’s not my kind of food but it was really good,

We went to the famous Buffalo Wings and Rings and I had a classic gyros sandwich,really yummy.

My eldest came back to study with his friends,big exam tomorrow so I thought a little treat will make them happy cause they’re all grumbling about how difficult the exam material is, so I made this giant chocolate chip cookie,in a skillet then served it with ice cream while still hot.

Ingredients and method:

* 2 cups flour.

* pinch of salt.

* 3/4 cup butter.

* 3/4 cup brown sugar.

* 1 egg.

* 1 tsp vanilla and 1 baking powder.

* 1 cup semi sweet or dark chocolate chips.

* mix flour,salt and baking powder.

* beat sugar with butter till creamy then add egg and vanilla.

* mix batter with flour with a spoon then add chocolate chips, mixture will be a bit crumbly.

* grease a medium sized skillet ( one that can be put in the oven or use a small oven pan)

* bake in a medium heated oven for 15-20 minutes or till sides are golden.

* serve directly when still hot with ice cream of your choice.

Chocolate Mousse .

Hello everybody.

Weather still hot and cloudy again today, I do hope sun will come out tomorrow morning cause I have friends coming for breakfast, I will be disappointed if weather forced us to sit inside.

I made chocolate mousse for dessert today so as to save time and leave it to cool overnight,

this is an old recipe I have,love it cause of simple ingredients,no gelatin or eggs, I never do anything that has uncooked eggs, paranoid of it I guess 🙂

Ingredients and method:

* 3 cups milk.

* 3 tablespoons custard powder.

* 1 big spoon butter.

* 1 cup melted chocolate or one big bar cooking chocolate ( today I used  the amount left from chocolate fountain )

* 3 tablespoons cocoa powder.

* 1 small pack cream.

* 1/2 cup sugar.

* plain biscuits.

 

* heat milk with custard till mixture thickens.

* add chocolate,sugar,butter and mix well.

* add cream.

* crush biscuits and rub them with a bit of butter.

* layer biscuits in small cups or a wide plate.

* add chocolate mixture,then decorate with anything you like, biscuits,coconuts or cocoa powder.

 

See? very easy and will be great with a strawberry on top and cup of coffee after breakfast,waiting for you lovely ladies .

Cardamom Cookies.

Hello everybody.
  I was invited to an event for Panasonic Beauty today followed by a delicious lunch. Plus I do have lots of food in the fridge so no cooking today.
   Nevertheless,couldn’t leave blog empty, so cookies are the choice, nobody will complain to find them in the jar tomorrow morning.
  Found this recipe in one of my cook books. Good one and easy plus I do have some fresh cardamom seeds, very aromatic and spicy, so thought to try these cookies.

Ingredients and method:
*2 cups flour.
* 4 teaspoons cardamom powder.
* 1/4 tsp salt.
* 1/2 cup grounded almonds.
* 1/2 cup sugar.
* 3/4 cup melted butter.
For the coating:
* 1 cup confectionary sugar (سكر ناعم ).
* 2 teaspoons powdered cardamom.
* almonds.

* mix flour, cardamom powder, sugar, grounded almonds and salt together. * add butter and mix with your hands till you have a frim dough. You can add a bit of cold water for easy handing.
* form dough into small balls.
* coat with powdered sugar-cardamom mixture. * press balls with a small cup to flatten a bit.
* decorate with almonds.
* bake in a medium heated oven for 10-13 minutes. Till bottom slightly golden then toast surface for 5 minutes.
* store in a well closed jar.

Perfect with black coffee, please try them, they’re really good ♡♥.

Dried Cranberries Raisin Cookies.

Hello everybody.
Back to school and work, house always a mess after the weekend as usual, lots of cleaning and laundry 🙁
   Cookie jar empty also, thought I’ll make a small batch, got some dried red cranberries yesterday, perfect with raisins, nuts and oat for a healthy cookie dough.

Ingredients and method:
* 1 egg.
* 1/2 cup  brown  or regular sugar.
* 1/2 cup red currents.
* 1/2 cup raisins.
* 1/2  cup crushed walnuts and almonds.
* 3/4 cup butter.
* 3/4 cup oatmeal.
* 3/4 cup flour.
* 1 tsp baking powder.
* 1 tsp vanilla.
* pinch of salt.
* cinnamon and ginger powder.
* beat butter with sugar till creamy then add egg and vanilla.
* mix all dry ingredients together.
* mix batter with dry ingredients to form a firm dough.
* scoop a small spoonful and line them on an oven tray .
* bake in a medium heated oven for 10-15 minutes.

   When I was done Mom and niece came by and brought me some fresh strawberries and sweet Anoud wanted a milkshake. So good with the cookies.

California Coffee Cake.

Hello everybody.
It’s been a while since I backed a cake..2-3 weeks, I searched in my cook book for something light and a bit different than I usually make.
Found this recipe, think I copied it from a magazine long time ago. Goes along great with a cup of tea or coffee.

Ingredients:
* 2 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup butter.
* 1/2 cup milk.
* 2 tsp baking powder.
* a bit of lemon zest.
* 1 1/2 cup flour.
Filling:
* 1/2 cup brown sugar.
*1 tablespoon butter.
* 1 tablespoon flour.
* 1 tsp cinnamon.
* 1/2 cup crushed walnuts ( optional).

Method:
* mix filling ingredients together very well.
* mix cake ingredients alternatively in order.
* grease or place wax paper in a cake pan, round or rectangular as you like.
* pour half of cake batter then sprinkle filling to cover then add remaining batter.
* bake in a medium heated oven for 30-35 minutes or till toothpick inserted is dry.
* cool completely then remove from pan.
* serve with tea or coffee.
