Rock Cookies Gift

Hello everybody.

Went to a lovely gathering at a newly wed friend’s house, we really had a great time, different generations all together around a delicious elegant variant table. Thank you sweet cheerful Nisreen we really had great time.

Because Friday is usually a long  day and afternoon went so slowly I was really bored that I suddenly decided to bake some Rock Cookies last night to take some with me.

I even created a box to fill them in,I wrapped an old  Lindt chocolate box  with gift’s paper then added a small decorative flower, never throw away these small things on chocolates or giveaways you never know when you’ll use them .

Lunch today is simple basic pasta with minced meat and tomato sauce with some leftovers from yesterday.

Homemade Halaweh (حلاوه بيتيه).

Hello everybody.

Lots of events today,started with a lovely breakfast gathering with my beautiful friends at Al Narenj restaurant located in Abdoun, highly recommended by the way, delicious food,excellent service and very relaxing atmosphere plus very reasonable price. Food is Middle Eastern and various,we were really full and satisfied. Definitely going back for lunch or dinner soon.

Lunch was light,broccoli soup,mushroom and cheese quiche ( same as spinach but used mushrooms instead) and some za3tar cheese pastries I did yesterday.

After lunch I decided to try a recipe my dear young cousin ,who’s a newly wed by the way but showing great cooking skills ,posted this afternoon on my page which is homemade halaweh. A product usually bought ready from stores and not a usual at all to do at home, never thought it would be so easy to do,even simple available ingredients.

Well it’s firming up in the fridge right now but I did taste it and it’s awesome, thank you lovely Mouna for the new adventure 🙂

Ingredients and method:

* 1 cup powdered milk.

* 1 cup powdered sugar.

* 1 cup tahini sauce.

* 1 tsp cardamon.

*1 tsp vanilla.

* some pistachios to garnish.

 

* Mix sugar,milk,vanilla,cardamon well then add tahini till all mixed,you may need less quantity of tahini so pour it slowly till you get a soft paste.

* press paste in mold or jar and garnish with pistachios then leave to cool in fridge.

 

That’s it,ready to go !

Hubby’s Birthday Celebrations.

Hello everybody.

Big Intercontinental breakfast this morning or actually noon celebrating my beloved hubby’s birthday,his favorite dishes eggs in different kinds and cheeses, it was really a nice gathering since we seldom meet for breakfast, a benefit from this storm at least 🙂

We skipped lunch cause all was full and now we’ll have the cake he asked for Red Velvet and of course a must every year Cream Caramel also a big big favorite.

Hope you’re all having a good time in this cold weather, I know it’s boring and makes one eat a lot but what else to do ?

Shakshuka.

Hello everybody.

Invited to breakfast this morning so I wanted to cook something as quick as possible, this simple rich dish was the rescue recipe, my husband saw and wrote it down  long time ago in Fatafeat cooking channel. Though the original recipe on the net usually doesn’t contain sausages like this one so you can do it with or without. Very tasty and good for a Friday brunch by the way.

Anyway breakfast was at a nice place in Taj Mall called Majnoon Qahwa, though service is slow as always in MOST Amman restaurants but food was really good and all in all atmosphere is cozy and nice,most important thing is that smoking area is completely separated so no Argileh smoke to suffocate you !

And they do have excellent Yemeni coffee,really strong and aromatic.

 

Ingredients and method of Sahkshuka:

* 1 large thinly sliced onion.

* 4 cloves of garlic ( used my new mortar to crush them)

* 1 can or 5 big diced tomatoes.

* some fresh sausages (optional).

* chili powder,salt and pepper.

* some chopped parsley (optional)

* 4-5 eggs.

* olive oil.

* saute onions and garlic in hot olive oil till tender.

* chop sausages and add  them.

* add the tomatoes,salt,pepper and chili then leave to simmer till done.

* crack the eggs on top and cover .

* leave over low heat till eggs are done the way you like them.

Walnut Caramel Truffles.

Hello everybody.

It was a pleasure to welcome my old university colleagues this morning for breakfast,though we don’t meet much but it’s always a pleasure to see them, good  memories and lots of laughter 🙂

Food was simple and delicious or is it the company that makes it enjoyable? cheeses,labaneh,cream cheese and jam from yesterday and a selection of croissants filled with salmon and turkey.

Dessert was these chewy walnut caramel truffles I made last night and a dish of fruits , found the recipe on Pinterest but made few changes, taste is just perfect.

Ingredients and method:

* 1 cup crushed walnuts.

* 2 cups crushed plain biscuits.

* 1/4 cup brown sugar.

* 1/4 cup maple syrup.

* 2 tablespoons cream.

* melted chocolate.

* Mix all ingredients together except chocolate then form it into small balls.

* line in wax paper and cool in fridge for 30 minutes.

* dip in melted chocolate and cool again,you can decorate top with walnuts while still hot.

These will be excellent for Christmas by the way,can be done and stored a week ahead.

Eggs in a Bun.

Hello everybody.

In no mood to cook today,my son suggested to do this eggs in the bun thing he saw once on Instagram so we did, tasted good but more a breakfast than a lunch option but a good choice with the remaining chicken pie from yesterday.You simply remove the inside of the bun,stuff it with cheese,turkey or salami and add the eggs then cover with foil paper and put it in the oven till eggs are done.

I also made some orange marmalade cause I have lots of citrus fruits from Ghor sent to us from our dear aunt, love this kind of jam, my favorite actually.

I also made some jam biscuits,needed the jar to be honest,they’ll be a good treat for tomorrow’s hunting trip.

Well full long day , hoping for a relaxing weekend !!

Peanut Butter Chocolate Chip Cookies.

Hello everybody.

Lovely sunny day,hope all weekend stays like this,started with a lovely breakfast outside in the sun, new olives are done they’re absolutely delicious.

I was invited to a gathering noon time and just before I left I decided to bake some cookies to take with me,after searching  in my books for something quick I didn’t do before I found this super easy one,  I used Quality Street chocolates, simply crushed a bunch in the food processor instead of normal chocolate chips,this box has been on the coffee table since Adha Eid so I’d better use it rather than eat it alone,don’t you all love these chocolates? never bored of them!

Ingredients and method:

* 1/2 cup butter ( reduce it a bit if using heavy chocolates)

* 1/2 cup peanut butter.

* 3/4 cup brown sugar.

* 1 egg.

* 2 tablespoons milk.

* 1 tsp vanilla.

* 1/2 small spoon baking soda.

* 1/2 tsp baking powder.

* 1 3/4 cups flour.

* 3/4 cup chocolate chips or crushed ones of any kind.

 

* Mix butters and sugar well till creamy then add egg,vanilla,milk.

* add flour,baking soda and powder then last thing add the chocolates.

*Shape into balls then flatten them a bit,usually I use a coffee cup bottom.

* bake in a medium heated oven for 10-13 minutes or till bottoms are golden.

* cool then keep in cookie jar or tightly closed tin.

These will sure put a big smile on a child’s face specially with a hot chocolate in a cold day 🙂

Potato Cups (بطاطا كاسات).

Hello everybody.

Still have some cabbages from yesterday but a small side dish is needed for sure cause it won’t be enough for all and because I’m going out for coffee with my friends to the Cake Shop I did this simple dish.

My mom used to make these cups too much when we were kids specially end of the week,really yummy, today they tasted exactly the same as old days, a pinch of nutmeg is the secret I guess.

Ingredients and method:

* 3-4 boiled till done potatoes.

* 2 eggs.

* small bunch chopped parsley.

* grated cheese ( white and cheddar usually)

* salt,pepper and pinch of nutmeg.

* mash potatoes with some salt,pepper then form it into cups and put them in fridge a while.

* mix eggs,cheese,parsley,salt,pepper and nutmeg.

* grease an oven pan then place potato cups and fill with mixture.

* bake in a well heated oven for 25-30 minutes.

Easy quick delicious yummy what else to say??

Beautiful Birthday Cake and Fitness Bars.

Hello everybody.

Too many occasions and birthdays  today,though nobody celebrating lives here but I did this beautiful cake anyway, lucky day for Jona my housemaid cause it happens to be her birthday also and she celebrated with her friends and ate the cake,well most important is that someone became happy eating it nevertheless.Happy Birthday Aya,AJ,Salma and happy anniversary to my beloved sis Reema, love you all.

Cake mix is the same as the Cherry Cake I did before but baked in a big rectangular pan to a thin sheet cake,then I added strawberry jam,cream and chopped strawberries and rolled all together like a Swiss Roll, covered with cream,toasted coconuts and finally decorated with strawberries and pineapples.

This cake reminds me of cake patisserie shops long time ago when we were kids in Jabal Al- Hussein,we used to walk to this small shop called Milano just to buy it,yummy yummy.

I also made these Fitness Bars,found a bit old Fitness pack in my pantry this morning,after a quick search in many websites I invented this no ingredients recipe, just mixed Fitness flakes with some butter,peanut butter,toasted wheatgerm and oats,coconut,raisins,brown sugar then added honey till mix is sticky then baked it for 20 minutes,cut to bars when cooled ,great breakfast energy bar,tasted exactly like the ones you buy from stores !

Oh lunch was sweet and sour from yesterday and I made some green fava beans in olive oil (فول بالزيت)

Happy Morning Breakfast.

Hello everybody.
We had the liveliest gathering this morning for my sister in -laws family,it was really great having you all.
  I made usual breakfast menu, labaneh,cheese platter, za’tar,hummus,Fava beans,fatteh,olives,eggs..etc.
Extra dishes were turkey cheese club sandwiches, labaneh murtadella wraps and small falafel tahini salad sandwiches.
Dessert was my mother in-law’s famous rice pudding and some End cookies.
May we always gather in good health and happy times.
