Humming Bird Cake.

Hello everybody.

Did this beautiful cake for my best friend’s son birthday, a traditional American recipe full of flavors and looked elegant as well.

Ingredients and method :
# 3 eggs.
# 1 1/2 cups suger.
# 3-4 ripe bananas.
# 1 can pineapple with syrup.
# 3/4 cup vegetable oil.
# 3/4 cup crushed walnuts, almonds or pecans.
# 1 tsp vanilla.
# 2 tsp baking powder.
# dash of salt.
# 1 tsp cinnamon.
# 3 cups flour.

Cream cheese frosting:
# 1 pack cream cheese.
# 1/4 cup icing sugar.
# 1/4 cup butter.
# some roasted crushed nuts.

# Beat eggs with vanilla, sugar and oil till creamy.
# mash and mix in blender bananas and pineapple can all together.
# add puree to cake mix.
# add rest of ingredients alternatively.
# bake in two small pans or one if you don’t want it layered.
# bake in a medium heated oven for 30-40 minutes or till dry from inside.
# beat frosting ingredients well and cool in fridge till stiff.

Decorate cake with filling inside out.

Friday Lunch at Mom’s.

Hello everybody.

Today’s lunch was at mom’s house,a treat from my kind adorable uncle Jeff ,he cooked us leg of lamb with roasted potatoes plus a very tender spiced roast beef and a big bowl of fresh green salad with vinaigrette dressing, everything was well done ,thank you uncle Jeff ,love you <3

After lunch I made banana split ice cream bowls for everyone upon special request a month ago from my beautiful niece,great after the meal and this hot weather. Love you Noudy <3

Hope you’re all enjoying your weekend,next week Ramadan will start Insha’Allah,hope it’ll be a blessed month full of good work and deeds.

Watermelon Fiesta !!!

Hello everybody.

Nobody home for lunch today and I was busy all morning making Date Rolls for my friend, when when done I was in no mood to cook anything.

This morning I bought a lovely watermelon, been waiting for it’s season to make these lovely servings or decorations all done with watermelons,fruits and cheese, as usual shape wasn’t as perfect as photos you see in magazines or websites but not bad for a first time, I’m sure this needs lots of practice and special cutters and lots of Photoshop :).

I also made a lovely refreshing juice with them,thanks to my Facebook friend who recommended it, I mixed watermelons with Tang lemon and mint and two ripe bananas with lots of ice. Very cooling in this hot day 🙂
