Smoked Salmon Bagels.

Hello everybody.

Thought I’d do some fresh bagels today,still have a pack of smoked salmon so a well combined rich bagel would be a lovely lunch for sure.

Did the same recipe as before, though today dough was so sticky so I added some more flour for easier handling.

Filled some with salmon, avocado, cream cheese, dill and capers and others with cheese,tomatoes and rocca.

Rice With Veggies and Avocado Dip.

Hello everybody.

Long hectic day, even lunch  became at dinner time!

I made rice with cubed meat and lots of veggies like carrots,beans,peppers, mushrooms,onions and a small tomato. Very tasty.

On the side I made an avocado dip, mashed two ripe avocados added yogurt, lemon,tahini sauce and salt, topped with tomatoes and chili powder.

Today’s orders were a bunch of crinkles and some cookies, chocolate and ginger, nuts and raisins.

Cherry Cake and Pasta with White Sauce.

Hello everybody.

Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.

So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.

When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

Avocado Cheese Burgers.

Hello everybody.

First day of external exams today, a special comfort meal is needed,nothing beats a good burger and fries don’t you think?

Tried my new Lodge cast iron grill,though I did as directed meaning I sprayed it with special oil ( Canola Oil Spray) then heated it well in the oven, all this so as it won’t stick but burgers got stuck a bit. Guess it needs more time or more oil.

Burger topping was mashed avocado with spring onions and garlic, really yummy and rich. I just love avocados.

Chicken Sandwiches.

Hello everybody.

Big family breakfast this morning,woke up early and baked lovely small ka3ek,table was full of yummy oriental stuff.

Lunch time came,no mood to cook at all,then remembered I have cooked chicken breasts in the fridge so I sliced them then added some pesto, tomatoes, lettuce, green onions, olives, avocado, relish and mustard great sandwich combo with the rest of morning ka3ek.

New Style Tuna Sandwiches.

Hello everybody.

Every time I decide to stay home and relax in end up working too much or doing multiple things at the same time.

First thing when I entered the kitchen this morning I realized I have one very ripe avocado and one lonely eggplant so made a dip (mashed with some lemon juice,tahini,yogurt and salt)   and baba ghanouj ( chopped grilled eggplants with diced tomatoes,peppers and some mints then topped with pomegranate sauce)

Then the daily question of what to cook started nagging in my mind, then decided to do a new sandwich style my cousin posted last night with shredded chicken but I made it with tuna, turned out really good, kids loved it.

Secret ingredient is the crunchy sandwich bread or crust done by cutting edges of toast  then soaking each couple together in whisked eggs then coating all with breadcrumbs.  I let them cool in the fridge so as to hold better then deep fried till crunchy, when cooled open and fill with any stuffing you like, today is added tuna with corn,capers, relish, mustard, mayonnaise and green onions,served with fries and big mixed salad.

Another task for today was making fresh pesto before basil turns black and a fresh fruit cocktail from new honey from Ghor, oranges, pineapple and bananas, really refreshing after all this.

Brioche.

Hello everybody.
Lunch today was a not a favorite to all family members so in order to compensate I did mushroom soup and made some Brioche with it, first time I do it, unfortunately result wasn’t that good either it needed more salt or it didn’t rise as it should. Recipe was easy though I felt it’s not going to be as supposed to when I finished kneading it,if anybody has a better one please recommend.
Ingredients and method :
* 2 1/2 cups flour.
* 2 tablespoons sugar.
* 1/4 tsp salt.
* 2 1/4 tsp yeast.
* 4 tablespoons warm milk.
* 3 eggs plus extra one for glaze.
* 1 cup cubed butter.

* mix flour, sugar, yeast and salt.
* add milk and beaten eggs.
* knead well then start adding butter cubes gradually till all quantity is folded in.
* leave to rise in a warm place, then form into balls in molds or cupcake pan.
* leave to rise again then bake in a medium heated oven till golden.
* brush surface with eggplants wash and roast till golden.
* serve with soup or butter and jam.

Lunch was lamb chops with onions and potatoes all seasoned with a new citrus organic spice, really aromatic and tasty.I also made mushroom soup as I mentioned,some Persian rice and a big bowl of mixed salad with avocado slices.

Back to Normal!

Hello everybody.
Thank God after two long stressful frustrating days dealing with a complicated problem at my son’s school problem was solved and done with, situations like this are really mind opening and gives oneself a hard but very useful lesson.
Well today  normal daily routine is back, lunch was burgers with avocado dip on top and a big plate of French fries best comfort food ever.

Zaynab Fingers or Tweitat.(اصابع زينب)

Hello everybody.

I guess everybody is still locked in today as well,weather was a bit better noon time but still freezing outside. Last night was phenomenal ,temperature reached -10 in some areas which is a rare thing to happen.

Lunch today wasn’t a big meal,frankly we’re all fed up from everything so I made a dish of avocado dip and fried some potatoes then topped them with herbs,garlic powder and cheese. We still have some shepherd pie from yesterday. very satisfying meal !

As for dessert I made Mom’s versions of this old Arabic sweet , baked Zaynab fingers or tweitat as some people call them. I know most people usually deep fry them but this recipe differs cause they’re baked not fried,less guilt for sure.

 

Though I posted the recipe before but I’ll write it again better for easier accessibility.

 

Ingredients and method:

2 cups plain flour.
2 cups whole wheat flour.
1 cup olive oil.( or half olive and half vegetable oil)
1 small spoon of instant yeast.
1 small spoon grounded fennel,anise and cinnamon.
Half a cup of sesame seeds. (سمسم محمص).
Half a cup of black seeds,I think they’re called sativa (الحبه السوداء.قزحه ).
1/2 cup sugar.
Pinch of salt.

For the syrup:
3 cups granulated sugar.
1 and 1/2 cups water.
1 small spoon lemon juice.
Boil all ,then leave to simmer till syrup is thick (30- 35 minutes).

*  Mix all ingredients then start adding warm water (almost a cup)  and knead well till you form a ball.
* Leave it to rest for half an hour then form it to small balls.

* Spread each ball on a grater and roll it to make it as fingers.(I use the hand grater)
*Bake in a well heated oven till bottom is brown.then roast surface as well.

Dip in syrup then remove..leave to cool and serve.
