Hedge Mustard (حويرنه).

Hello everybody.

Home  alone today,boys and hubby went to the farm early morning so no need to cook and since I’m going with my mom to visit her cousin this afternoon which will definitely serve lots of goodies,so a light lunch will do.

This herb crossed my mind this morning  and I was lucky to find some at the grocery store, though it’s much tastier if picked fresh from fields but we city people will have to live with bunches in stores , not so fresh but good enough.

 

It’s usually salted and washed many times then mixed with some yogurt or labaneh and some green onions,sharp peppery taste . For me this is the most perfect meal ever, love dairies in all shapes and kinds 🙂

I did some search for benefits of hedge mustard turned out it’s a very useful herbs as anti-inflammatory and anti-fungal actually long time ago it was called the “Singers Plant” cause of great effect in laryngitis and cough and soothing effect on throat , well good to know right?

As I said today is a compensation to last week’s lousy food ! since I’m free this morning plus no car available, which is a blessing sometimes, I made stuffed chicken with veggies,freekeh soup, beetroot salad and this traditional kind of sweet called Zalabia which is as described best fried Crepe.

Stuffed Mushrooms and Chicory Salad.

Hello everybody.

Long shopping day as usual and no time to cook something so thought I’ll fix anything quickly.

I have some ready from store stuffed mushroom also from Miles that I didn’t make yesterday, so they were a good rescue, not bad but as my boys said the ones we make at home are much tastier.

I also made a bowl of chicory salad (هندباء او علت) ,I posted this dish long time ago,this plant is a favorite dish to many,cooked or as salad though the ones freshly picked from Ghor or farms are much more aromatic and original than the bunches bought from stores,but these will do for now, it’s a simple salad done with chopped chicory, very well washed cause it’s usually fill with dirt,then you add green onions,lemon juice and salt.

Nice quick lunch, will make it up tomorrow for sure.

French Vanilla Coconut Cake.

Hello everybody and good morning.

Today we’re all invited to lunch at my husband’s dear aunt in Irbid so up North in an hour (شمات زي ما بنقول),I’m positive it’ll be a fancy meal and lovely enjoyable time as always, will post photos later for sure.

Usual me, I baked this delicious cake which I ate the other day at a gathering, easy and juicy, I wrote it down as Tara’s Cake,thank you lovely bride for the recipe.

Ingredients and method:

* 1 pack French Vanilla cake mix.

*1 can coconut milk.

* 1 can sweetened condensed milk.

* 1 pack whipping cream.

* roasted or regular coconuts.

 

* mix cake as instructed but bake in a  deep rectangular or oblong Pyrex or serving pan ( cause cake will stay in it and served)

* with a knife make several cuts in the cake when cooled.

* mix coconut milk with sweetened one together and pour over cake and leave till all absorbed ( you can do it a day ahead and keep in fridge)

* decorate top with cream and coconuts.

Amazing recipe,guess it’ll be nice to do in Christmas Eve right?

Cha3acheel ( brown lentils in yogurt ) شعاشيل.

Hello everybody.

I’m sure many of you are asking what is this you’re talking about? I know it’s a weird name for lots of people, even strange to some living in Jordan cause it’s a traditional very old dish from Irbid region North of Jordan.

My mom never did it  cause she doesn’t like anything that contains lots of eggs in it,personally I started doing it only recently,took the recipe from my dear aunt Eman, it’s a kind of dish you make once or twice a year usually in Winter or when you have leftover Mansaf (cooked jameed)

In fact it’s a very nutritious meal,full of proteins and herbs, though many find it hard to make or fails sometimes,it may become very loose or hard,the trick is to add enough flour to have the correct consistency.

NOTE: these ingredients are for a big amount,you may use half of it according to quantity you want.

Ingredients and method:

* 12 eggs.

* 5 cups flour (half whole wheat and half white)

*1 finely chopped onion.

* 1/2 cup fresh green thyme.

* 1 bunch chopped parsley.

* 1 tsp baking powder.

* 1 cup cooked brown lentils.

* 1 tablespoon dried thyme,salt and pepper.

* cooked yogurt or Jameed .

 

* Mix 1/2 the lentils,eggs,parsley,fresh and dry thyme,salt and pepper.

* saute onions till soft then add to mix.

* add flour gradually and mix well till you have a sticky dough ( not hard nor soft).

* boil the yogurt with the rest of the lentils.

* boil some salted water then drop a tablespoonful of the dough in it,it’ll directly form a stiff ball, if it crumbled or didn’t hold together this means you need to add more flour.

* remove balls as soon as they float to the top then leave to dry on paper towel.

* drop them in the yogurt while boiling then leave to simmer on low heat for 40-50 minutes.

مقادير وطريقه عمل الشعاشيل:

(مقادير لكميه كبيره, طبعا يمكن استعمال نصفها حسب العدد)

* 12 بيضه.

* 5 كاسات طحين, نصف اسمر بلدي ونصف ابيض.

* بصله مفرومه ناعم.

*كاسه عدس مسلوق.

* 1ظ2 كاسه زعتر اخضر.

* بقدونس مفروم ناعم.

*1 ملعقه باكينغ باودر.

* ملح وفلفل حسب الرغيه.

*جميد او لبن مطبوخ

* تحمس البصله في شويه زيت حتى تذبل.

* تخلط المقادير مع البصله ثم يضاف الطحين حتى يصبح الخليط كالعجينه الطريه.

*ملاحظه: يضاف نصف كوب العدس الى الخليط والنصف الاخر الى الجميد

* تغلى ماء مع ملح ثم اسقطي بها مقدار ملعقه كبيره من الخليط, اا1ا لم تتماسك راسا وتصبح كره يعني يجب اضافه طحين.

* انشلي الطابات عندما تطفو الى السطح وعندما تنشف اضيفيهم ال الجميد.

* يغلى على نار هادئه لمده 40-50 دقيقهز

Black Olives Pate(معجون الزيتون الاسود).

Hello everybody.

Went out shopping today,changed the hectic tiresome week for sure, it’s true that shopping is the best therapy, I’m positive husbands don’t agree with me 🙂

At lunch time kids were out and we weren’t in the mood to eat something heavy,so I took out some Irbid loaf (قراص عيد) given to me by my beloved aunt,heated it to eat with fresh labaneh,new makdous though it needs more time to ripen, some olive pate and tabouleh from yesterday, best lunch EVER,this is my favorite kind of meal anytime of the day !

Black olives pate is very delicious and easy to make,I removed seeds of old olives from last year,added some chili,basil and garlic powder then processed them all together. keep it in a glass jar covered with olive oil, very nice spread for sandwiches or as  dip with chips,better than buying it ready made right?

 

Note: you can keep it in freezer to be more fresh whenever you want it.

Rock Cookies ( كعك صخري)

Hello again.

As I mentioned earlier I also made some cookies and packed a bit as a gift, I think this is a very loving giveaway or gift, I mean when you cook or bake something for someone you love or care about, you can feel that in the taste or look, is this true or do I imagine this??

Rock cookies are very popular,In Irbid you can find them in every house you visit in Eid time, I have this recipe from my auntie who’s very famous in doing them, but I modified a bit by using brown sugar instead of white and added dried cranberries.

Ingredients and method:

* 2 eggs.

* 1 cup sugar or 3/4 brown sugar.

* 3 big spoons butter.

* 1 cup mixed nuts ( walnuts,almonds,pistachios,hazelnuts)

* 1/2 cup raisins.

* 1 tsp cinnamon,pinch of cloves,cardamom and nutmeg.

* vanilla,1 tsp baking powder and a pinch of salt.

* 2 cups flour.

 

* mix eggs,sugar and butter till creamy.

* toast nuts in the oven for 10 minutes then crush them.

* add nuts and raisins to flour,baking powder and salt then add egg mixture.

* mix very well with wooden spoon till you have a not too soft nor tough dough.

* make spoonfuls of the dough on a baking pan,size of a small ball.

* bake in a medium heated oven for 10-13 minutes or till edges are golden.

* store in a well sealed jar or tin.
