Another Kibbeh Fiesta.

Hello everybody.

Kibbeh day, intention was to make some mini ones and spread in a pan with nothing else or at least only some fries.

But then one thing led to another, got excited to do more appetizers to complete the Lebanese style, so end result was muhammra, rocca salad, chili potatoes, various types of kibbeh ( even fried the extra dough)  and new olives.

All extremely yummy, my favorite kind of food.

Lamb Chops Over Salt.

Hello again.

Another cooking over salt today, this time with lamb chops. Result was awesome, tender aromatic well done meat.

I simply added spices and rosemary to chops and layered them over a bed of salt with some baby onions and potato.

Cover tightly with foil paper then into the oven for one hour, uncover and drizzle with olive oil. Leave to rest for 10 minutes then dig in.

Chops weren’t salty at all, juicy and tender just perfect. Highly recommended method, I’m now thinking what to try next time 😀

Spinach Day.

Hello everybody.

I was  invited to lunch today so I cooked very early, a selection of dishes was the menu cause main dish was spinach stew and my husband is not a fan at all .

Alternatives were spinach pastries, beetroot orange salad and a small dish of hedge mustard (حويرنه) with yogurt.

Veal Escalopes,Croquettes and Coleslaw.

Hello everybody.

Lunch today was semi ready, brought ready made veal escalopes and potato croquettes from my favorite grocery store in Amman, Centro Stores. Salad was two coleslaw bowls one with raisins the other without for the boys.

By the way all butchery goods at Centro are delicious, most important thing is the friendly professional staff who cares about every detail.

Chicken Tikka Masala and Chocolate Cake.

Hello everybody.

Today’s order is for a crowd, three portions of chicken tikka masala and rice for a group of employees during lunch break.

Dessert was a beautiful freshly baked chocolate cake with syrup on top, green ornament to match the company’s logo shape and color.

Pumpkin Soup and Shepherd Pie.

Hello everybody.

Two warm dishes today , perfect in this cold day.

Pumpkin soup and shepherd pie, both filled with lovely veggies and aroma.

Ingredients and method of the pie:

* cooked ground beef.

* chopped onions and garlic.

* some veggies,peas,carrots,corn and mushrooms.

* 3-4 boiled potatoes.

* soy sauce,ketchup and Worcestershire sauce ( i didn’t have it today so I used HP)

* bread crumbs.

* salt and pepper.

* Saute onions,garlic and meat in some oil or butter.

* add the veggies and sauces and simmer till done.

* mash the potatoes with some butter and milk,salt and pepper.

* pour the potatoes over the veggie meat mix.

* bake in a medium heated oven for 30-40 minutes.

* sprinkle some bread crumbs on top and toast.

* Serve hot with ketchup and salad.

First Catering Order.

Hello everybody.
Did my first official order today to a dear friend of mine.

Date rolls, baked Zaynab fingers were the dessert part, za’tar puffs, smoked kebabs with Iranian rice were appetizer and main dish.

Steaks with Onions and Mustard.

Hello again.

Had to cook something quick before going out this morning, easiest of all grilled steaks covered with spices and mustard with caramelized onions on top.

Side dishes were mashed potatoes and lentil soup.

Salt Baked Potatoes with Garlic and Rosemary.

Hello everybody.

Roast beef is for lunch today, usually accompanied with baked potatoes and veggies,which were all done in a different way I saw last night on my favorite source of new recipes Pinterest.

First I’ll start with the beef,sealed in hot oil butter mixture at first in a deep pan then I added some onions and garlic and gradually started adding boiled water and left it to simmer for 3 hours. Removed the beef to rest,added some flour to the sauce to make a gravy, so tender and yummy.

As for the potatoes here are the ingredients and method :
* 2 cups salt.
* medium sized potatoes.
* one whole head of garlic.
* some rosemary leaves.
* 1 tablespoon butter.
* drizzle of olive oil.

* in a deep thick oven pan spread the salt evenly.
* place the potatoes, rosemary and garlic after cutting the hard top.
* cover tightly and bake for 40-50 minutes.
* remove garlic to cool.
* drizzle olive oil on top of potatoes and back in the oven for another 10 minutes.
* meanwhile remove soft garlic pulp and add butter to it, I added a bit of yogurt as well to make a bit sour.
* cut potatoes and add garlic spread in it.

Serve with any roast or chicken.

As for the mushrooms, cut them to big pieces then add butter, oil, garlic, lemon juice, capers, salt and pepper and bake them till tender. Add chopped parsley when done.

Stuffed Cabbages.

Hello everybody.
It’s cold and rainy today, cooking plan is just perfect for this weather which is stuffed cabbages.
Just remembered that I made a video last winter of how to stuff and cook them,will repost it below.

You should do it this week since it’ll be raining for few more days.

* minced meat.
* rice.
* ghee and vegetable oil.
* salt, pepper, all spices, dried mint.
* cabbage,  boiled and stems removed.
* garlic as much as you like.
* lemon juice.
Method:
*  Wash the rice then add the meat. I usually cook it before a bit.
* add spices, salt, mint.
* stuff the cabbages and line them with garlic in between.
* add lemon juice, a bit of oil and enough water to cover all cabbage.  I have this heavy pottery lid I use as weight or you can put a heavy plate.
* cook for 10 minutes over high heat then lower it and cook it for another hour or till rice inside is done.
