Cherry Cake and Pasta with White Sauce.

Hello everybody.

Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.

So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.

When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

Pizza in a Pan.

Hello everybody.

Lazy cold cloudy Friday, why does it become like this on weekends????

Well at lunch time I suddenly decided to try this pizza recipe my cousin posted last week, a spreadable kind of dough in a pan, topped with pizza sauce, toppings and cheese then cooked on the oven. Turned out really good and extremely quick to be done as said in video.

While pizza on stove I made some Rock Cookies for the empty jar and send some to my friend on the occasion of birth of her first grandson, congratulations

Baked some of the cookie dough in a skillet,super yummy.

 

 

Ingredients and method of pan pizza :
# 1 cup flour.
# 2/3 cup warm water.
# 1/2 tsp baking powder.
# 1 tsp instant yeast.
# 1 tsp salt.
# 1 tsp honey.

# mix all these ingredients well together then spread evenly in a nonstick pan.
# add pizza sauce then any toppings you like ( basil,oregano, tomatoes, olives…)
# top with cheese.
# cover tightly and cook on the stove on high temperature for 5 minutes.
# remove pan lid a bit and lower heat to minimum and leave for another 10 minutes.
# toast top till crispy.

Quick and easy way to make your favorite pizza.

Simple One-Pot Pasta.

Hello again.

Lunch was a first trial, just saw this recipe on Pinterest last night and couldn’t wait till morning comes out to make it, looked so interesting and exactly that’s what it turned out.

You can find lots of versions of this dish but all have the same principle, you simply add whatever you want of veggies,meat,chicken or sausages to raw pasta ,add herbs,salt pepper,oil and water then leave to cook till done !! that’s it.

Ingredients and method:

* chopped courgettes,mushrooms,onions,garlic, cherry tomatoes,chives,basil and black olives.

* 1 pack pasta.

* salt, pepper, oregano and some olive oil.

* 4 1/2 cups water.

* Note: I added a cube of chicken stock also.

* some cream or milk if you like added when pasta is done.

* Parmesan cheese upon serving.

* Put all ingredients together in one pan then add water.

* boil then leave to simmer on low heat for 45-60 minutes or till all done.

* add cream and cheese then serve.

Day Off!

Hello everybody.
Lovely day off at Dead Sea,beautiful weather with amazing company, I really needed this day.

Day ended with a super delicious dinner at Napolitana Pizzeria, haven’t had such a satisfying well presented meal in a long time.
We had an antipasto platter of marinated veggies and two kinds of pizza, dessert was yummy teremaisu and elegant espresso with cream.

Multi-grain Soup.

Hello everybody.

Still have 2-3 freezing days to go, heavy snow since morning and expected icing this night ,they say it’ll be like never ever before !

Found this bag of Italian multi-grain mix bag in Select Food Shoppe last week, I soaked a cup last night so as to tenderize a bit for easier cooking.

Simple easy way to make this soup, you simply saute some chopped onions with some olive oil,add the soaked grains,salt,pepper and a bit of cumin then add 5 -6 cups water and a Maggi cube and leave it to cook in pressure cooker for 40-50 minutes. I added some small pasta and lemon juice as well. Of course you can add meat cubes if you like it richer.

 

I also made Shepherd Pie and some Za’tar buns for lunch.

Homemade Pasta !

Hello everybody.

After a chit chat with my cousin living in Rome last night discussing how fresh homemade pasta is much more tastier than commercial ones and since I do have a pasta making instrument stashed away in my kitchen cabinet,I decided to start rolling it while we’re already stuck indoors in the cold weather.

Basic egg pasta recipes are all similar ,only 2 ingredients but secret to a successful dough is to let it rest and flour surfaces and roller so as pasta won’t stick to each other.

 

Ingredients and method:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

 

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll in the thickest number in roller.

* keep dusting with flour so as layers won’t stick.

* roll again to a thinner layer and so on till you have very thin ones.

* last thing roll in pasta shape and dust them with flour when done ( an extra helping hand during this process is not a bad idea:) )

* cook in salted boiling water for 4-5 minutes only.

* remove and cook the way you want,today I made it with mined meat,mushrooms,onions with herbs and tomato paste .

* sprinkle with cheese when served.

 

Hope you try it if you have this magical machine ,really worth it, totally different taste !

Happy New Year :)

Hello everybody.

Waited till now to write my post so as not to ruin the surprise,  I baked  a beautiful birthday cake for my lovely cousin  requested by her sweet sister-in-law,I also made an Apple Pecan Pie as a gift from me. Happy Birthday dear doc and Happy New Year to you and all your family, love you all.

As for our new year’s eve, we had a small special candle lit dinner at home , very early so as not to eat heavy late at night then ended it with our usual coffee with chocolates, typical family celebration, we’ll watch T.V for the rest of the night.

Dinner was steaks with sauteed veggies, cheese pastries, mixed green salad with lentils pomegranate and feta cheese  and a new dish which was extremely delicious “Italian Mushroom Risotto” got these dried mushrooms from my cousin living in Rome, soaked them in water then sauteed them with onions and butter then cooked the rice with mushroom soaking water, really yummy yummy.

 

Ingredients and method of Apple Pecan Pie:

* pie crust.( same as apple pie)

* filling:

* 3 big peeled chopped apples.

* 3/4 cup chopped pecans.

* 1/2 cup sugar ( brown or regular)

* 1 tablespoon starch.

* 1 tablespoon cinnamon.

* 1 tablespoon butter.

 

For the crumble:

* 1/2 cup finely chopped pecan.

* 2 tablespoons butter.

* 3/4 cup flour.

* 1/2 cup sugar.

 

* spread pie crust in special pie pan.

* mix filling ingredients together and add on crust.

* mix crumble ingredients in food processor till crumbly .

* add on top of pie filling.

* bake in a medium heated oven till golden from sides. (30-40 minutes)

Italian Style Courgettes and Meatballs.

Hello everybody.

Today’s lunch idea is from my dear cousin living in Rome,she’s a great source of many dishes I did, love her recipes because I feel they’re original or taken from Italian housewives not books and restaurants. Thank you dear you always give me new ideas which are always yummy.

Though courgettes in Rome look different than ours but guess taste is similar, I even did some pumpkins with them. Idea is to stuff them with meat only and I made rice on the side.Taste is really yummy and everybody loved it.

I also made a small side dish from the remaining meat,stuffed them with mozzarella cheese and made them  balls,coated with bread crumbs then sauteed them in some oil.Amazing with some thick tomato sauce as dip on the side.

Ingredients and method:

* hollowed courgettes ( cut them from both sides)

* mined meat mixed with 2 tablespoons breadcrumbs( or 1 egg and little breadcrumbs as you prefer),salt,pepper,some chopped parsley and Parmesan cheese.

* For the sauce:

* finely chopped tomatoes ( 4-5) or a can.

* 1 stick celery.

* 1 small onion.

* 1 small carrot.

* basil leaves,salt and pepper.

 

* mix meat well and stuff courgettes then line them in a Pyrex or oven pan.

* chop onion,celery very fine and saute in olive oil.

* add grated carrot and tomatoes.

* add a bit of water and leave to simmer till thick.

* pour over courgettes,cover and leave in the oven for one hour till done.

 

Note : I used remaining meat mix to make mozzarella stuffed balls.

Honey Glazed Lamb Chops.

Hello everybody.

In addition to routine shopping I went to the butcher this morning, though I’m not a meat expert but I managed to get what I want with the help of the friendly butcher in Miles store.

My youngest son who’s a big meat lover asked for lamb chops,even searched for a new kind of marinate or seasoning and came out with this one to try, really delicious mind that meat is very tender and fresh also.

I made some potatoes mixed with herbs and spices, some Greek quesadilas cause I have some tortillas from last week that must be used before they ruin and a big bowl of salad.

Excellent meal to end the weekend 🙂

Marinate for lamb chops :

* 1/4 cup honey.

* 1/4 cup soy sauce.

* 1/4 cup Worcestershire  sauce.

* 1/4 cup mustard.

* salt,pepper.

* some Italian seasoning,chili,oregano.

* some bay leaves.

* olive oil.

* lemon juice for serving.

* mix all and marinate chops in a bag for 1-2 hours then roast uncovered in a medium heated oven till done.

Minestrone Soup.(شوربه ايطاليه)

Hello everybody.

Rainy day and I have a bad flu, a rich hot soup is a blessing in this case.I did this soup once in Ramadan but didn’t post the recipe so it’s a chance to do it again, definitely a rich aromatic tasty one.

Ingredients varied when I searched for the recipe so I consulted my dear cousin living in Rome for the original one that Italians usually do and she gave me the secret ingredient that you won’t find in any recipe but I added it after taking the photo.

Ingredients and method:

* 1 small finely chopped onion.

* 1 clove garlic.

* bunch of chopped basil.

* 1/2 cup chopped celery.

* 1 small chopped zucchini.

* 2 small chopped carrots.

* some sun dried tomatoes.

* 1/2 cup black beans.

* 1/2 cup green beans (optional )

* 2 leaves finely chopped lettuce. (secret ingredient)

* 1 can chopped tomatoes.

* 1 tsp tomato paste.

* 4 cups broth or water and cube of broth.

* 2 bay leaves.

* salt,pepper and oregano.

* 3/4 cup small shaped pasta.

* Parmesan cheese.

 

* saute onions,garlic,carrots,celery till tender.

* add rest of ingredients then broth and pasta and 1 tablespoon of cheese, boil then leave to simmer till done and all ingredients are tender.

* sprinkle with Parmesan cheese when served.
