Jamie Oliver’s Ginger Lemonade.

Hello again.

Made this refreshing juice this afternoon, a recipe I saw in one of Jamie Oliver’s tv shows, very cooling in this hot weather.

You simply mix together son=me grated fresh ginger, lemon juice and slices, mints and brown sugar then add some hot water to dissolve sugar then before serving add cold sparkling water.

Very nice one try it.

Hello everybody.

Saw this recipe on Fatafeat cooking channel the other night, when I searched the net I found a big variety of recipes of the basic one but with many flavors either fruits or coffee.

First trial was with melons and it turned out really good, refreshing and light I even liked it more than ice cream, definitely a winner!

# 1/2 cup water.
# 10 ice cubes.
# 1 melon cut to chunks.
# 3 tablespoons lemon juice.

# dissolve sugar with water and boil for 3 minutes then add ice cubes, leave till they melt.
# in a blender mix syrup, melons, lemon juice all together.
# pour mixture in a big metal pan and put in freezer.
# after one hour begun scrapping edges and mix all together.
# keep doing this every now and then till you get a crystal or slushy mixture.
# Serve with fruits or alone.

Note: you can blend mixture a bit if it gets too hard next day.

Energy Bites!

Hello everybody.

Did a massive fridge and freezer cleaning today and took out many things stored since a long time so as to do something useful or throw them away.

Result was a mix dried fruits, nuts, crushed biscuits, blueberries, oats all bound together with honey and molasses with a bit of cinnamon, cardamom and ginger. They’ll make a super snack during Ramadan specially at suhour time cause they’re full of nutrients and fiber which will help during fasting next day.

Another outcome was a plate of chickpeas with tahini sauce ( مسبحه) decorated with parsley and nuts.

Lunch was Shakshouka, no cooking till beginning of Ramadan, that’s my decision so far.

Fruit Garden -Dabouq.

Hello everybody.

Been wanting to go to this place for a while now specially after they posted last week that they have an offer on berries ( buy 5 get 2 for free).

Well today since I had some spare time before picking my son from his exam and to stop worrying about it I passed by the Fruit Garden shop located in Dabouq and how happy I was that I went.

Neat, clean, cheerful place with helpful staff and very good prices, they even told you should come take pictures on Friday cause all Asian fruits arrive Thursdays, will definitely go back.

They have many services like preparing and cutting your veggies, sanitized herbs and vegetables, juices and fruit baskets, my dream shop.

Can’t wait to do yummy things with those fresh berries, started by a detox water mix with some mints.

Lunch today is pizza, again comfort food cause of the exams.

Hello everybody.

Bright clear sunny morning after heavy thunder and rain all night, really refreshing though dusty day all over again :(

Went shopping as usual , very crowded streets and shops!!! came back to make quick lunch as I have cooked minced meat in freezer so pasta with white sauce was the option,  did fresh roca pomegranate salad with walnuts and grated cheese on top and fresh fruit salad for dessert, all extremely fresh and nutritious.

Ingredients and method for pasta:

* cooked tube shape pasta.

* white sauce (bechamel) ,try to make it not too thick so as it can fill pasta easily.

ingredients and method of white sauce:

  • 4 tablespoons butter.
  • 4 tablespoons flour.
  • 4-5 cups milk.
  • salt,pepper .
  • heat pan then add butter and flour, stir well till flour is golden.
  • add milk gradually and whisk well while doing that till all quantity is well incorporated.
  • add salt and pepper.
  • keep whisking till it boils and becomes thick.
  • add cheese now or later on between pasta layers as you wish.
  • Note: if clots appears you can simply use hand mixer a bit or blender.

* cooked minced meat with tomato sauce ( I added small chopped onion, garlic, basil, oregano and tomato paste.)

* some butter for greasing the pan.

* mozzarella cheese for the top.

* grease oven pan with butter then add half of the pasta.

* add half the amount of white sauce then add tomato meat sauce over it.

* add other half of pasta and white sauce, sprinkle with dry oregano and cover.

* bake in a medium heated oven for 30-40 minutes then add cheese on top and roast till golden.
