Recipe is the same old I usually do but with a twist this time, added some strong coffee to half of the mixture and made two layers of the mousse with cream on top as well.

No Bake Banana Oatmeal Peanut Butter Bites.

Hello everybody.

Had these three ripened bananas in my fruit basket that said please use me 😀😀
Best thing to do was this recipe I always pops out on Facebook, easy energy balls that serves great as snack or breakfast even.

Just mash your bananas, add oatmeal, crushed biscuits, honey and peanut butter (optional), pinch of cinnamon then mix well and form into balls.

I drizzled chocolate on top as well, really yummy 😋

Apple Pudding Eclaires Again.

Hello everyone.

Order for tomorrow done today cause it’s better cooled overnight, apple pudding eclaires in small cups.

ingredients and method:

* 5-6 large apples.

* 1 tsp cinnamon.

* 1 tablespoon flour.

* sugar if desired.

* 1 pack whipping cream.

* 1 pack fresh cream.

* 1 pack cream cheese.

* 4 packs vanilla pudding or you can use homemade pudding also.

* plain biscuits and some milk.

* peel and chop apples then add flour,cinnamon and sugar and mix well.

* mix together whipping cream,fresh cream,cream cheese and pudding very well .

* line the biscuits in a deep serving dish and sprinkle with some milk.

* add half the amount of cream then half of apples.

* repeat the layers then decorate with crushed biscuits and cinnamon.

* keep in fridge overnight for better results.

Lunch was fresh pasta salad from my talented friend Maysa ,a must try all kinds of homemade pasta can be found at Maysas.Pasta, mixed it with fresh mushroom and cooked veggies with lemon,mustard,mayonnaise dressing .

Hello everybody.

Though I try not to take orders Friday but this one I couldn’t say no to cause it’s from a special old friend to her family.

Thank God though order was a bit variant but all went smoothly and was done on time.

Apple Raisins Rice Pudding.

Hello everybody.

Last night as I was about to turn off the TV the Italian chef Lidea caught my attention making this recipe, rice pudding but with a twist, she added apples and raisins which really looked yummy and rich. Actually I think anything with cinnamon is delicious.

Well today I decided to implement it right away, a nice dessert for my hubby cause he’s on diet, I used skimmed milk, sativa sugar and only a small spoon of butter and cornstarch instead of egg yolks.

Ingredients and method :
* 4 cups milk.
* 1/2 cup sugar.
* 3 tablespoons cornflour.
*1/4 cup rice.
* 2 large peeled sliced apples.
* 1/2 cup raisins.
* 1 tsp butter.

* heat 3 cups of milk till warm.
* in the remaining cup dissolve cornflour and sugar well.
* boil rice for 10-15 minutes,drain and cool.
* add rice and cornflour sugar mixture to boiled milk.
*stir well and leave to simmer for 20-25 minutes.
* in a deep baking dish, spread butter then add apples,raisins and cinnamon.
* pour rice milk mixture on top then into a minimum heated oven for 20-30 minutes or till volume reduces.
* serve with vanilla ice cream or fresh cream.

Best Birthday Party.

Yesterday we celebrated my nephew’s first birthday, our bundle of joy is one now.

Theme of the party was teddy bears, cake, cupcakes and all ornaments were brown and yellow. All done by my talented sister in-law, very elegant and cheerful.

Healthy Light Cheesecake.

Hello everybody.

Got a cute bag of Sativa raw sugar from my husband’s cousin last week so I thought I’d do a nice healthy dessert with it.

After some research I tried this mix, the lightest I could make though a small pack of cream was a must to give some richness and a bit of strawberry sauce on top to add some sweetness.

Ingredients and method :
* for the crust :
* 1/2 cup finely crushed almonds.
* 1/2 cup finely chopped walnuts or hazelnuts.
* 1 tablespoon honey.
* 1 tablespoon low fat butter.
*  Mix all ingredients till crumbly then press into a cheesecake pan or small pots.

Cheesecake mix:
* 1/2 pack of light cream cheese.
* half cup yogurt.
* half cup Sativa raw sugar.
* two tablespoons labaneh.
* one pack cream.
* one tablespoon lemon juice.
* Beat all ingredients together till  soft and creamy then add on top of crust.

* Refrigerate overnight then top with strawberry syrup or fresh berries.

Apple Pie.

Hello everybody
We’re Mansaf-ing today on the honor of the bride and groom to be next week Insh’Allah.

Mansaf is not my specialty, my mother in-law’s kind of cooking, I did the dessert traditional apple pie.

Ingredients and method of apple pie:

*Crust:

* 1 egg.

* 1 tsp vanilla or lemon zest.

* 1/2 cup sugar.

* 3/4 cup butter.

* 1 3/4 cups flour ( you may need 1/4 more to make a firm dough)

* pinch of salt.

* 2 tablespoons cold water.

Filling:

* 5-6 large apples peeled and cut to slices.

* 1/2 cup walnuts (optional).

* 1/4 cup raisins (optional).

* 1/4 cup brown sugar.

* 1 tsp lemon juice .

* 1 tablespoon cinnamon ( sorry forgot to add it in the photo)

* beat the egg.vanilla,sugar and butter till creamy.
* add flour and salt and knead well till you have a firm round dough ( add more flour if it’s sticky and you can’t handle it)
* leave to cool in the fridge for 30 minutes.
* spread 3/4 dough in pie pan evenly in bottom and sides.
* pinch it with a fork so as it won’t form a bubble.
* mix filling ingredients well and pour them into the pie pan.
* make shapes to decorate top of pie from remaining dough ,sprinkle surface with flour or use plastic bag for easier handling.
* bake in a medium heated oven for 30-40 minutes or till sides and bottom are golden then toast the surface.

Homemade Ravioli.

Hello everybody.

Very busy eventful week,orders dinners and birthdays.

Last night I had guests at dinner, tried to make it a restaurant style one , served salad which was Greek with capers and feta cheese then pasta, penne and ravioli, then main course, grilled veal with mushroom sauce, baked potatoes and veggies and one portion of grilled salmon with garlic dill and olive oil.Desert was teramisu.

here’s the ingredients and method of ravioli:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll to a rectangular thin layer.

* make stuffing of your choice, cheese,spinach with cheese,meat .

*add one teaspoonful of stuffing in a line , cover with another rolled dough, add egg wash on sides  then cut into squares using a cutter or roller knife.

* keep dusting with flour so as pieces won’t stick to pan.

* cook in salted boiling water for 4-5 minutes only.

* cook in cream with basil and garlic or tomato pasta sauce as you wish.

I can humbly say it was an excellent meal and everybody had a great time.
