Baking Day!

Hello everybody.

Two busy days, was invited to a big family lunch at my cousin’s in Irbid , loving gathering with lots of yummy food. Always a pleasure to visit my hometown.

Today started with baking Eid bread ( افراص عيد) traditional old kind of bread usually done in Eid time ,this time I tried to correct what I did wrong each time I did them before by making them thick and bake them in a very hot oven.Result was really good this time !

Then I cooked lunch ,Kabseh with hot sauce and fresh salad .

meanwhile I baked a beautiful cake for my friend’s son birthday ,chocolate and strawberries with ganache drippings.

Crunchy Chicken ( Nigella Lawson Recipe).

Hello everybody.

Just had our late lunch or rather dinner you can say, it was a delicious selection of dishes, crunchy chicken which is a recipe I saw on Fatafeat cooking channel , cheese and olives puffs a recipe from my lovely friend Rula and roca salad.

 

As I saw chicken recipe on Chef Nigella Lawson’s show the other night , so easy and looked yummy and all was proved today.

Ingredients and method:

*4 pieces chicken breasts.

* 1 egg.

* 2 tablespoons mustard.

*1 tsp salt.

*1 tsp cinnamon.

*1 tsp chili flakes.

*1 tsp garlic powder or chopped garlic .

*2 cups crushed cornflakes.

*some oil for frying the chicken.

 

 

*beat chicken breasts till flat and thin.

mix mustard , egg ,spices and salt well.

* Dip chicken in mixture in both sides.

*cover with cornflakes .

* you can saute in hot oil on both sides immediately or freeze then for 30 minutes before better.

*Serve with any salad or sauteed veggies.

Egyptian Cookies Again.

Hello everybody.

Actually order is for tomorrow but I usually like to make cookies a day before cause they are more tender the next day. Kind of settle down and flavor is much better.

Here’s the ingredients again :

Ingredients and method :
# 2 cups fine semolina.
# 4 cups flour.
# 2 cups butter or ghee ( I used 1/2 ghee, 1 butter and 1/2 vegetable oil)
# 1 tablespoon anise powder.
# 1 teaspoon fennel powder.
# 1 tsp special cookie spice (كلفه كعك)

#1/2 tsp mihleb

#1/4 tsp mistaka.

#2 tablespoons sesame seeds.
#1/2 cup sugar.
# 1 tsp instant yeast dissolved in 1 tablespoon sugar and a cup of warm water.
# 2 tablespoons rose water.

# pitted dates mixed with cinnamon, cardamom, cloves and anise powders.

# Heat butter then mix with semolina, flour and all spices very well till crumbly.
# leave for 2-3 hours or better overnight till all butter is well absorbed.
# add frothy yeast and water and mix all well.
# add rose water and knead all together.

# start working right away by stuffing small portions of dough with dates and shape them in the molds.

Another Date Rolls Baking Day.

Hello everybody.

Another day of baking, date rolls are a favorite to many. They’re actually really yummy and healthy.

I’ll post ingredients and method again :

Ingredients and method:
* 5 cups flour
* 4 cups whole wheat flour (طحين اسمر ).
* 1 cup vegetable oil.
* 1 cup olive oil.
* 1 cup margarine or ghee.
* seeded and ground dates (2-3 packs).
* 1/2 cup sugar.
* 1 tsp sodium bicarbonate.
* 2 big spoons ground anise (يانسون ).
* 1 big spoon ground fennel (شومر ).
* 1 big spoon cinnamon.
* 2-3 spoons sesame seeds and black seeds ( سسمسم وقزحه ).
* 1 small spoon mahaleb (محلب )
* mix all oils and spices with flour well till it forms crumbles and leave overnight so as flour absorbs all oils and essences.

* to the dates add olive oil, cinnamon, anise powder, nutmeg, cardamom . A little sprinkle just to add some flavor.

* add warm water to flour enough to make a dough 1-2 cups..it must be easy to handle not hard nor soft.
* cut dough and dates to four portions.
* roll one part of dough to a big  thin rectangle between nylons.
* roll dates all to same size rectangle between wax paper or nylon.
* place date over dough and cut unorganized edges.
* roll dough and dates together 3 or 4 rolls.
* cut to 1 inch slices then pat with your hand to flatten them a bit.
* with a sharp knife cut surface to small lines.
* bake in a medium heated oven till bottoms are golden and then toast surface a bit.
* store in a cookie jar or well sealed box.

 :المقادير:
* 5 كاسات طحين ابيض
4 كاسات طحين اسمر
* 1 كوب زيت نباتي
* 1 كوب زيت زيتون
* 1 كوب سمنه او زبده
* 2-3 باكيت تمر مطحون

* 1/2 كوب سكر

* .1 ملعقه صغيره بايكربونات
* يانسون 2 ملعقه كبيره يانسون مطحون
.1 ملعقه كبيره شومر مطحون
* .1 ملعقه كبيره قرفه
* 2-3  ملعقه كبيره سسمسم وقزحه
* 1محلب ملعقه صغيره
*     تخلط جميع المقادير مع بعض جيدا قبل بليله او على الاقل 4-5 ساعات ما عدا التمر طبعا ويفرك الطحين جيدا بالزيت والسمنه

*( يرش التمر ياليانسون والفرقه والهيل ويفرد بين نايلون ويرق ليصبح طبقه رقيقه جدا( استعيني بزيت الزيتون على النليلون حتى لا يلزق التمر

* يضاف ماء فاتر بالتريج الى العجينه حتى تصبح متماسكه وطريه

* ترق العجينه بنفس طريقه التمر بين النايلون

* (توضع طبفه التمر فوق العجينه برفق وتلف رول (لفتين  فقط

* تقطع الرول الى قطع صغيره وتصف في الصواني

* يزين الوجه بواسطه سكين

* تشوى في فرن متوسط الحراره حتى تحمر

* تحفظ في علب محكمه حتى لا تنشف

Egyptian Date Cookies ( كعك مصري او اساور)

Hello everybody.

A friend of mine ordered this particular kind if date cookies, called Egyptian ka’ek, we actually call it bracelet cookies cause it’s round.

Got the recipe from my best friend Ruba, cause I never did them before, recipe is very similar to one I once did called Nawa3em but with a slight difference is that you add rose water when you knead them.

Ingredients and method :
# 2 cups fine semolina.

Nachos.

Hello everybody.
Lunch today was upon boy’s request nachos,mushroom soup and homemade bread.

Made two loaves, one topped with oregano the other with sesame and black seeds.

Nachos are a favorite for many, so easy to make at home by the way,here are the ingredients and method
* 1 big pack nacho chips.
* 1 small onion finely chopped.
* 1/2 cup red beans.
* 1 big ripe tomato also finely chopped.
* a bit of hot pepper and Tabasco.
* salt and pepper.
* cheddar cheese.
* sour cream or labaneh.

* saute onions till tender in oil.
* add all other ingredients except cheese
* simmer on low heat till done.
* spread nachos in a wide oven pan.
* spread sauce over it.
* add cheese and put in the oven till cheese melts.
* serve with sour cream or guacamole on the side.
* Note: you can add jalapenos, black olives and fava beans to sauce also.

Eid Bread ( اقراص عيد)

Hello everybody.

So many people ask me about the recipe of this special bread usually done in Irbid during Eid or special occasions.

Matter of fact there’s no specific one with exact ingredients, each lady makes it her own way. But basically it constitutes of
# whole wheat flour.
# white flour.
# anise seeds ( both seeds and powder)
# fennel
# mihleb
# sesame seeds and black seeds.
# salt.
#olive oil.
# yeast dissolved in warm water and sugar.
# you may add yogurt or powdered milk.

# combine all ingredients and knead very well for 10 minutes.
# leave to rise then make into small balls.
# spread over special wooden moulds to make the design. Don’t make them too thin though.
# lots of olive oil is used during this process.
# leave to rest then bake in a well heated oven.

وصفه اقراص العيد , المكونات

 طحين اسمر وابيض , ملح,يانسون, شومر, محلب سمسم وقزحه وملح في ناس بيضيفوا لبن او حليب بودره،
تذوب الخميره في ماء فاتر وملعقه سكر ثم تضاف الى المقادير وتعجن جيدا.
المهم يخمر ويرتاح العجين وما ترقي كتير رقيق وبده زيت زيتون كتير

Ka3ek and Cheese.

Hello everybody.

Two lovely friends came to visit this morning and since I woke up so early today I decided to bake some ka3ek.

A small simple breakfast with minted tea,I always feel good about myself when I bake breads don’t know why, guess it’s the smell maybe.

Dough ingredients :
* 6 and extra half cups flour.
* 2 tablespoons oil.
* 1 tablespoon instant yeast.
* 2 tablespoons sugar.
* 2 1/2 cups lukewarm water.
* 2 teaspoons salt.
* 1/2 cup milk.
* some sesame seeds.
* some semolina to sprinkle under the Ka3ek.

* Mix water,yeast and sugar and leave ten minutes till bubbles are formed.
* Mix flour,salt and oil then add yeast and water and knead well.
* leave in a warm place till it rises ( 1-2 hours)
* knead again then form it to loaf shape or place a metal ring inside to make a circle in the middle.
* Brush with milk and sprinkle sesame seeds in top.
* leave to rise again then bake in a well heated oven for 15 minutes.

Old Fashioned Date Cookies (نواعم)

Hello everybody.

Usual beginning of the week, cleaning,cooking and organizing.

Lunch today was mloukhieh with chicken though my family are not fans but it’s a good quick solution sometimes.

After all household work was done I thought I’d try a small quantity of these cookies so as to try the new mould my hubby bought from downtown and mainly cause I have this extra pack of dates from last Eid,don’t like to keep old stuff for long periods.

Found this recipe in various pages but I elaborated a bit on it, to be honest I used a bit of pure homemade ghee (سمنه بلدية)  in order to have this old times smell and flavour.

Ingredients and method :
# 2 cups fine semolina.
# 4 cups flour.
# 2 cups butter or ghee ( I used 1/2 ghee, 1 butter and 1/2 vegetable oil)
# 1 tablespoon anise powder.
# 1 teaspoon fennel powder.
# 1 tsp special cookie spice (كلفه كعك)
#1/2 cup sugar.
# 1 tsp instant yeast dissolved in 1 tablespoon sugar and a cup of warm water.
# 2 tablespoons rose water.

# pitted dates mixed with cinnamon, cardamom, cloves and anise powders.

# Heat butter then mix with semolina, flour and all spices very well till crumbly.
# leave for 2-3 hours till all butter is well absorbed.
# add frothy yeast and water and mix all well.
# add rose water and knead all together.

# start working right away by stuffing small portions of dough with dates and shape them in the moulds.
# bake in a well heated oven at first then reduce heat to medium till golden.

Serve with tea or coffee.

وصفه النواعم :
2 كوب سميد ناعم
4 كوب طحين
2 كوب زبده او سمنه( اليوم استعملت كوب زبده، نصف كوب سمنة بلدية ونصف كوب زيت نباتي)
ملعقة كبيرة يانسون
ملعقة صغيرة شومر
ملعقة صغيرة كلفه كعك
نصف كوب سكر
ملعقة صغيرة خميره مذوبه مع كوب ماء فاتر ومعلقه سكر
ملعقة كبيرة ماء زهر.
تمر مطحون ومعجون مع قرفه، هيل،كبش قرنفل ويانسون

اضيفي الزبدة الذائبه وهي ساخنه الى السميد والطحين والبهارات واخلطي جيدا.
يترك المزيج ليتشرب الزبد لمده 2-3 ساعات.
تضاف الخميره والماء وماء الزهر ويعجن المزيج جيدا
تحشى كرات من العجين بالتمر وتوضع في القالب وتصف بالصواني
تشوى النواعم في فرن حامي جدا من قبل ومن ثم متوسط عند الشوي

Bread in a Pan.

Hello everybody.

Have some dear friends coming over this evening and upon their request I did some light dishes cause they’re on diet and frankly so do I at least trying to cut down meals and sweets,a decision I try to comply to every September.

So I did a cheese platter, Caprese salad with some watermelon,labaneh with walnuts and some veggies.

A healthy bread loaf to go to with all this was in my mind since morning so after some research I found this healthy easy one that you bake in a deep pan.

Ingredients and method :
# 5 cups whole-wheat flour or a mix of two kinds.
# 1 tablespoon yeast.
# 1 tablespoon sugar.
# 2-3 cups warm water.

* Mix 2 cups of the flour with all the ingredients and cover till it’s bubbly.

Then add the remaining flour with
# sun-dried tomatoes.
# fresh oregano.
# pitted olives.
# any kinds of seeds you like.

Mix all very well with a wooden spoon and cover till it doubles in size.

# heat the oven with a deep metal pan in it till both are very hot.
# sprinkle some flour or semolina in the pan and add dough quickly.
# bake covered for 40 minutes then uncovered for 15 to get a crunchy crust.

Leave to cool then cut to slices.
