Salted Caramel Momofuku Style Cake.

Hello everybody.

I accidentally  came across these kinds of cakes at Pinterest the other day and been eager to try one them, so a surprise birthday for a cousin was just the right time to do it.

Seems this style of cakes is famous in the US and can be found in a chain of the restaurants of chef and founder David Chang. specially in its Milk Bar Bakeries . today i tried the simplest one as a start and the result was super yummy, I’m not kidding but taste and texture was extraordinary .

Though to be honest I used less sugar and butter than original recipe but it was good, not too sweet nor heavy.Steps are a bit long but believe me it’s worth it specially if done before night and kept in freezer.

Ingredients and method:

For the cake base:

3/4 cup butter

1 cup sugar

3 eggs

1 tsp vanilla

pinch of salt

1/2 cup milk

1/2 cup yogurt

1 1/2 tsp baking powder.

2 1/2 cups flour.

Beat sugar and butter till creamy.

add eggs then all other ingredients consequently then divide batter in two medium sized pans.

bake in  a medium heated oven for 30-35 minutes.

leave to cool.

Caramel milk mix:

1 cup warm milk

1 cup caramelized popcorn

mix together and leave to use as a soak for the cake.

Caramel cream mix:

1 cup fresh cream

1 1/2 cups sugar

3 tablespoons butter

1/2 tsp salt.

heat the cream till warm

heat sugar till it caramelize the slowly add to cream and mix well.

add salt and butter and mix well

leave to cool.

Cream Cheese caramel mix:

1 cup cream cheese.

1 tablespoon butter

1 tablespoon icing sugar.

1/2 cup from the caramel cream mix.

beat cheese till creamy then add other ingredients then leave to cool in fridge.

Caramel crumble:

1/2 cup crushed caramel popcorn

1/2 cup flour.

1 tablespoon corn flour.

1/4 cup sugar

1/4 cup butter.

pinch of salt.

mix all ingredients till it’s crumbly,

bake for 15-20 minutes.

Assembling the cake:

  • start with the first cake ,soak it with the caramel milk.
  • top it with half the caramel cream mix.
  • add half the crumble.
  • add half the cream cheese mix.
  • repeat the same process end the top with cream cheese.
  • for better result freeze cake overnight .
  • garnish with caramelized popcorn.
  • you can use  cake ring to keep it in shape or just wrap it with foil or nylon.

Banana Chocolate Biscotti.

It’s been a long time, missed writing new recipes a lot cause ever since I started catering I haven’t got enough time to try something new , till today :)

Lucky me no cooking this morning so I found it an opportunity to use the lonely ripe 3 bananas in the fruit basket into something instead of becoming too soft and then throw them away.

So after looking through my fridge i found two Lion Bars also, some walnuts and butter. New biscotti trial then it is and the result was super yummy.

Ingredients and method:

  •   2 eggs
  • 3/4 cup sugar.
  • 1 cup butter and vegetable oil
  • 3 ripe mashed bananas
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup walnuts
  • 1/2 cup chocolate chunks (any kind you like)
  • 3 tablespoons coccoa
  • 2 1/2 to 3 cups flour
  • 1 tsp baking powder.

Beat eggs with vanilla and sugar.

Add butter and oil then all ingredients and knead well to get a soft manageable dough.

Form it into a wide log then cut lengthwise to thin strips.

Lay them on baking sheets.

Bake in a medium heated oven for 15020 minutes or till a bit dry.

Dip ends with melted chocolate and crushed walnuts if you wish.

Hello everybody.

Baking and decorating a new cake with specific qualifications is becoming a big challenge, full of anticipations and excitement to reach the final look. It’s a feeling I guess similar to painting art or designing a dress , you just can’t wait to finish .

This weekend’s cake was for a graduation party, client wanted it flowery, pink with some leaves and topped with macaroons. though the idea was to use baby pineapple instead of the cactus but unfortunately I couldn’t find.

Cactus was the alternative and It was amazing, gave the cake a beautiful touch.

Been trying different types of biscottis lately , all results were excellent by means of taste and texture.

not so sweet and not too hard, the right thing to have with your morning coffee.

Base of dough is almost the same but I used different flavors, anise seeds, coconut and blackberry jam and today’s amazing ones were chocolate with nuts.

Ingredients and method:

Coconut jam biscotti:

  • 3 medium sized eggs or 2 large .
  • 1 cup sugar.
  • 1/2 cup butter
  • 1/2 cup vegetable oil.
  • 1 cup coconut
  • 3 tablespoons blackberry jam
  • 1 tsp vanilla
  • 1 tsp baking powder.
  • 2 cups flour ( might need a bit more to make dough easy to handle)

Chocolate Nuts Biscotti:

  • substitute coconut and jam with 3 tablespoons cocoa and half a cup of crushed nuts ( walnuts ,almonds and hazelnuts)

*Beat eggs, vanilla and sugar well till creamy.

*Add butter and oil.

*Add all other ingredients subsequently till you get a a dough , you can add extra flour to make it easy to form.

*Shape dough to a cylinder then cut with a sharp knife to slices.

*Bake in a medium heated oven for 10-15 minutes or till bottom is firm .

*Leave to cool then store in a cookie jar or tin.

Mini Qatayef With A Twist.

Hello everybody.

Ramadan Kareem.

Tried these cute mini qatayef today, they’re similar to the ones served with cream or Nutella but in a different way.

You’ll need mini sized qatayef , fresh cream, crushed pistachios and sugar syrup or honey.

Spray a mini cupcake pan with vegetable oil then put qatayef in it , bake for 15-20 minutes or till edges are golden.

Cool then fill with fresh cream or ricotta with a one tablespoon rosewater and few crushed mistika

Decorate with pistachios, add honey upon serving.

Hello everybody.

Did this Easter inspired cake today for a friend and I may say it turned out very nice, though i took the idea from Pinterest but of course colors and final look weren’t exactly the same.

Cake is chocolate with cream cheese filling and Oreo , brown spots on cake are done from a paste of cocoa and water then dripped with a brush and nest effect done with knafeh pastry .

Decorating With Russian Nozzles.

Hello everybody, hope you’re enjoying Spring.

Couple of days ago I tried decorating my lemon poppy seed cupcakes with cream cheese icing using the Russian nozzles for the first time.

Outcome was nice considering that I didn’t practice before and surprisingly cream cheese frosting was good enough, cause everybody says that these tools only work with butter cream .

Hello everybody.

 

Long full day, full of cakes flowers and presents.

Grand finale were two beautiful cakes for my mother in-law and mom، though I assembled them in a hurry but they turned out real beauties, covered with colored cream to match the macaroons and meringues on top.

First layer was lemon velvet filled with strawberries and top layer chocolate filled with ganache. So yummy.

Hello everybody.

I now strongly believe that some recipes do actually call me to try them, I know this might be weird but true cause I look through many many recipes on daily basis but not all interest me to try them.

Well couple of days ago I saw this light healthy recipe in an account I follow on  named Bandora (means tomatoes) , vegan type of kibbeh great for vegetarians or lint.

Fifty percent of ingredients is burgul, other half is sautéed onions and tomatoes, raw green onions, carrots,zucchini, coriander, parsely, mint, chili paste,salt, pepper,summaq and olive oil. All together in the food processor.

Turkish Coffee cake.

Hello everybody.

Loved the idea of using Turkish coffee in a cake, never occurred to me before until I saw  it on Measuring Cups Optional , loved the idea a lot since I’m a big coffee fan.

The recipe posted was more like a fudge cake so I kept searching for similar recipes, Pinterest of course, found many cakes with coffee but not Turkish  ( espresso or instant) so I combined both recipes together and the result was really awesome.

Took the cake to my cousin’s this morning , big family gathering and everyone just loved it.Coffee chocolate lover will surely fall in love with the rich taste.

Ingredients and method:

  • 3 eggs.
  • 1/2 cup brown sugar.
  • 3/4 cup sugar
  • 1 tsp vanilla.
  • 1/2 cup vegetable oil.
  • 1/2 cup milk.
  • 1 tsp ground cardamon.
  • 2 tablespoons Turkish coffee powder
  • 1/2 cup cocoa.
  • 3 tsp baking powder
  • 1/4 tsp baking soda.
  • 2 1/2 cups flour.
  • Beat eggs and sugar with vanilla  till creamy.
  • Add oil,milk.
  • add coffee and cardamon.
  • Add cocoa ,baking powder,baking soda and flour consequently.
  • Bake in two or three pans  as you wish in a medium heated oven for 30-40 minutes.
  • cool then assemble layers with cream and any kind of dark chocolate.

For the cream:

  • 1/2 cup heavy cream
  • 2 sachets whipping cream
  • 1/2 cup cooled boiled Turkish coffee with 1 tsp instant coffee with it.
  • Whip all ingredients till double in size and fluffy then cool in fridge.

3 بيض
نص كوب سكر بني
3/4 كوب سكر ابيض
نص كوب زيت نباتي
ملعقتين كبار قهوه تركي ( بودره مش مغليه)
ملعقه صغيرة هيل مطحون
نص كوب كاكاو
ملعقه صغيرة فانيلا
3 ملاعق صغيرة باكينغ باودر
ربع ملعقة كربونات الصودص
2 1/4 كوب طحين.
يخفق البيض والسكر جيدا ثم تضاف باقي المقادير بالتتابع.
تخبز بفرن متوسط الحراره لمده 40-45 دقيقه.
انا عملتها بقالبين وحشيت كريما بالنص.
الكريما
علبه قشطه
باكيتين كريما بودره
فنجان صغير قهوه تركي مغليه مع نص معلقه نسكافيه
تخفق جيدا وتبرد.
تحشى الكريما بين الطبقات وحطيت كمان شوكولاته سوداء.
تزيين حسب الرغبه.
